Yes, you can proof the sponge dough at room temperature (the time varies depending on the room temperature. Normally takes 1-3 hours) . Once it has risen doubled in size and you can mix hte sponge dough with the main dough.

Hi Thanks for this awesome video. May i ask how to check : 1) if the dough is "hard" or “soft" by touching it, and then to decide if to add more liquid or not? 2) is it ok to leave the first dough in fridge for more than 15 hours? And need to put to room temperature before mix ? Thanks

1) yes, if the dough is really sticky, add a bit flour . If too hard, add a bit liquid. 2) yes, you can. Better bring the dough to room temperature while shaping.

@@LisasKitchen Thanks so much for your reply. I tried mixing the first dough and i have added instant yeast to ice water by mistake instead of cold water. The dough didn’t rise very high in room temperature after 1.5hr, it is in the fridge for over night proofing, I wonder can this dough still be used? Will ice water with yeast affect the bread dough?
