Hi Lisa, your recipe and video look great. Two questions, can I replace milk powder with whole milk? I want to have the milk taste but don't have powder form. Also, I don't have a machine for making the dough, is it possible to just electric handheld whisk? Thank you.

If you don't have milk powder, just ignore it. You can't replace it with milk because the dough will become very wet. If you don't have machine, just knead the dough by hand, it may take longer time but it still works. The beater or whisk on the hand mixer doesn't work on dough.

Can I ask: Sponge Dough method and Tangzhong method, which one keeps the bread moisture longer?
