You're gonna love this delicious Chicken Noodle Soup, it is nutritious, easy and packed with flavor. I always prepare this Chicken Noodle Soup during Fall and cold days, but it's delicious anytime of the year, your whole family will love it and the best part about it is it's made with ingredients most of us already have. INGREDIENTS _____________
8 Bone in Chicken thighs (skin on top with excess fat removed)
1 chopped large onion
1 large minced garlic clove (or 2 medium)
4 medium celery ribs (small pieces)
4 medium carrots (small dice)
2 bay leaves
1/2 tsp dried thyme leaves
1/2 tsp crushed Rosemary
3-5 C. egg noodles (or as needed)
freshly chopped Italian parsley
1/4 C. small diced Red Bell Pepper
Salt ad needed
Pepper as needed
1 Tbsp vegetable cooking oil
12 C. Chicken Stock

I love that you used bone in chicken, so many people don't realize how much nutrition is lost by not cooking the bones with the chicken. You soup looks great! I made some myself for lunch today. I have a bad cold and it was what I needed. I used my home canned chicken and one jar of pot pie filling and one jar of chicken soup with carrots. When I make it from scratch like you did, instead of peppers, I add petite peas and some cornstarch slurry near the end of cooking the soup. I like it a tiny bit thicker. I would like to try yours, though, it looks yummy!

This looks delish! One tip I have for soups...when there is pasta in the soup...I knows it's a little extra work but if u cook it noodles on the side ( I usually cook them in chicken broth) but then add them into ur bowl it keeps the noodles from getting mushy. I usually make a huge batch of soup so I can freeze a bunch and with the noodles in it they end up getting mushy when reheating bu if u keep the noodles separate it heats up much better. Its like fresh soup every time
