I'm a Gujarati...Sanjyotji i love your recipes and I've tried a lot of your recipes...wanted to share a lil different recipe of handvo....we soak dal n rice for 6 to 7 hours then we grind them together using khatta dahi...then we add lil of coarse wheat flour in to it and add jeggory in it (not sugar) which boosts the fermentation in it and then keep it in a warm place. And we also make sure to put methi leaves along with veggies.... putting coarse wheat flour and methi leaves makes it whole meal that is dal, rice ,roti ,subji. That makes it more like a meal.

If people want a gluten free recipe, then they don’t add wheat. There’s already rice in there which is a grain so it’s already a complete meal

Wow.. you have nailed the recipe. Alternatively, we keep handva flour at home by dry grinding the rice & dals (like dhokla flour) & then follow the same receipe (add curd & then ferment)

Authentic gujrati recipe to hai but ...... Sanjyot ji ....Handwa ko log kisi bhi tarike se paka lete hai , but isko authentic tarike se ret par hi pakana chahiye kyuki taste me zamin aasman ka ( pulao - biryani jaisa)fark aa jata hai. Iska special cooker aata hai, bina siti wala. Jisme niche choti si tray raheti hai jisme ret bharni hoti hai. Gas ki flame par pahele ret wali tray rakh kar upar Handwa wala cooker rakhte hai. Fir ekdum law aanch par pone ghante tak pakate hai. Tab aata hai asli authentic Handwa ka taste. Kisi bhi bartan me, microwave me log paka lete hai yeh dekh kar thoda dukh hota hai, kyuki pura taste ruine ho jata hai ☹️

As a Gujarati, i love how you enjoy gujarati foods. I will recommend you all to use jaggery instead of sugar it will surely elevate the taste and in winters you can also put fresh green methi in the batter and it will taste delicious.

I am Gujarati and I thank you for sharing original recipe of Handva. Handva cooker is used to make very big donut shaped handva and we call it spicy cake 😉😂🤣😋 First-ever cake which is full of veg and protein and it is not sweet but spicy and sour ❤

Thanks a million! I am Gujarati and I make handvo using handvo maker almost every week. 11:16 Actually I live in Maryland, winter here is very harsh. I had Indian gas stove in my garage, so if I have to make handvo, with handvo maker, I have to use my stove in garage. It’s not fun to make it in winter, so I wanted try your recipe. I was very nervous and with so many doubts in my head I tried it and it turned out better than handvo maker. It was out of this world. All your recipes are always worth trying it. I have also tried idli, pav bhaji, Bombay sandwich. They are awesome.

Rai methi vaghar me dalonge to accha lagta hai aur iron ke bartan me bhi Banta hai apka bhi bahut achhi taraf banaya hai me gujrati hu aur apki sab recepi dekhate hi I like recepi❤🎉❤🎉👌👌

Perfect explanation da thambi Thanks for the receipe... We tamil people add ginger/ garlic, red dry chillies, onions to batter. We don't ferment batter, no curd , fruit salt. Urad and methi is added to it... Yes short rice and other 2 dhalls It gives a different taste... try it.. Thanks for your receipe as well..😊

In South India we prepare a dish with this batter of rice and lentils,,,,we add onions ,methi leaves,green chillies, ginger,coriander leaves n curry leaves,,,,we pour like dosa on tawa and it is called "ADAI". Tastes yummy

Handvo ka special cooker (jese bati ka cooker)rehta hai, jo usme banta hai use handvo bolte hai... But ur recipe is just perfect.... Love it... Looking forward more gujrati recipes... I am a South Indian, we make a recipe called adai which has the same ingredients and grind the rice dal with red and green chilli's Kari patta etc and grind like rawa batter ferment it. We don't add vegetables except onion or without onion. We cook it in dosa tawa. It tastes amazing

As this is also a way of making HANDVO,but we Gujjus traditionally make this recipe in a special utensil called HANDVA COOKER ..... Its taste is unbeatable...❤

I always watch your videos & it’s really very helpful . Basically I am gujarati & the way you describe the recipes that’s really good . As a gujarati we make Handvo with Methi no bhaji & green garlic . Specially in winter we can use lots of green garlic & Methi ni Bhaji to make Handvo .

Chef, you should think about demonstrating a handvo cooker in one episode. One can cook various types of handvas , podas of orissa and even cakes in that. Theres a similar cooking technique kokani recipie called dhondas. It's an oven. Also- i use this handvo better to make appe!

Very nice. 👌All time favourite recipe 😊 I use green peas, corn and coriander leaves also. For different taste ,I use Mehia Keri pickle dry masala. That taste mind-blowing 😋 Happy to see one of my favourite snack recipes 😍

Chef,sometime I really amused by you making Gujarati food with so much ease just like a Gujju do. ❤ You can use even cooked rice for fast fermentation in winter. You can also bake it in oven in cake mold. By the way, you are a guru for my novice home chef. Weekends,he will see your videos and make recipes,specially the paneer ones.

In my childhood we had some aluminum special vessel for making Handvo. I used to get black pebbles like sand used in building construction and put it in that special handvo making vessel's center area. The height size of handvo in that vessel used to give cake like height. Whenever I eat Handvo now , it evokes that memory. By the way, your receipe and videography looks great.

I make some of your recipes and they come out perfectly! Handvo looks like has same batter as the Adai batter made in South india. They make idli with it too, there are other versions of it to make Ponganalu with the same batter apart from dosa version of it. Adai is usually not fermented but some of us do. In andhra we make with only Urad and rice to make Minapa rotti ( has more urad compared to idli or dosa batter) Made exact way as Handvo with onions, green chillies and tomatoes, no extra spices added.

Gujarati style me handavo n dhokale par til ya peanut ka kacha oil dalke khate hai. Vo bhi bataye aap vedio me. Aur khichu par bhi oil dalke khate hai isaka test alag hi ho jata hai
