豆沙鍋餅總是在一頓飯的尾聲才悄悄上桌,往往已經吃到好飽好飽,但那麼香的豆沙鍋餅冒著煙望著我,我是怎麼樣也拒絕不了這個誘惑的。喜歡的人可以一次多做幾片放冷凍,扁扁的不占空間、可以保存一兩個月,要吃的時候又不用解凍,直接下鍋煎,馬上享受被美食香環繞的感覺!天啊怎麼會有這麼完美的食物!
:食譜:
食材▼
中筋麵粉 150 g
糯米粉 75 g
熱水 70 g
冷水 70 g
鹽 1/8 小匙
油 8 g
豆沙餡 210 g
白芝麻粒 2 大匙

I love crispy red bean paste pancake. How much I love it? I am not a red bean person, but I can't reject a piece of crispy red bean paste pancake even while I am too full to eat anything...but the red bean paste pancake. It's so crazy. As long as I smell it, I need it.
Now, you can make it at home by following the instructions below.
:Recipe:
Ingredients▼
all purpose flour, 150 g
sweet rice flour, 75 g
hot water, 70 g
room temperature water, 70 g
salt, 1/8 tsp
cooking oil, 8 g
sweetened azuki bean paste, 210 g
white sesame, 2 Tbsp
:Instruction:
●Preparing the Fillings
1. Divide sweetened azuki bean paste to 3 portions and shape
them into balls and set aside.
●Making the Dough
2. Place flour, sweet rice flour and salt in a mixing bowl.
3. Stir in hot water. Mix it well.
4. Add room-temperature water. Mix it well.
5. Add oil. Mix it well.
6. Knead the dough until incorporated. If it can't form a dough, add a little more water.
7. Keep kneading to form a dough. Cover with a lid and let the dough rest for 30 mins.
8. Place white sesame into a plate and set aside.

9. The dough has become softer and more expansive. Slightly knead the dough and shape it into a ball.
10. Cut and divide into 3 portions.
11. Shape them into balls.
12. Cover with a wet cloth and rest for 10 min.
◆ 10 min. later ◆
13. Take a small dough, flip over and slightly press down.
14. Roll out the dough.
15. Place the filling on the dough.
16. Wrap the filling tightly.
17. Make 3 pieces in the same way.
18. Sprinkle some water on the surface.
19. Coat the dough with white sesame.
20. Roll the dough with white sesame coated side up.
21. Flip over and roll out the dough.
22. Wrap the pancake with a baking paper.
23. Place into a sandwich bag and transfer to a freezer.
●Pan-frying the Pancake
24. Heat a flatpan and add oil.
25. Place frozen azuki bean paste pancake sesame side down
into the pan. Don't need to thaw the pancake.
26. Shake the pan to heat the pancake evenly.
27. Cook until the edge becomes golden and flip it over.
28. Shake the pan to heat the pancake evenly.
29. Cook until the pancake puff up and flip over again.
30. Shake the pan to heat the pancake evenly.
31. Flip over again.
32. Remove from the flatpan.
33. Cut into 6 portions.
34. Enjoy!

早晨呀,剛剛睇完影片,請問煎咁短時間,那些豆沙餅的表面的包皮會熟嗎?

影片有剪輯過啦,當然要煎到熟哦!因為餅皮扁扁的確實不用煎太久,熟了之後表皮會有點半透明。如果怕餅沒有熟也可以蓋蓋子中小火燜煎一下,開蓋後再把兩面煎上色!
