Zucchini & Baby Eggplant Sandwich | Vegetarian

This is one of my favorite ways to eat eggplant. Honestly the only way I cook it as of now. I have to learn some new recipes!
Anyways this is a great sandwich because it's so rich, creamy, tangy and tasty! You need to have good bread though. Don't skip on that! Actually every ingredient in this plays a major role. The zucchini give it a soft buttery feel, the eggplant gives it that delicious upfront note, the goat cheese offers a fun tangy creaminess and the bread just seals the deal with a contrasting crunch.
