This overnight Vegan French Toast Casserole recipe is absolutely amazing! Crusty bread covered in a delicious custard and baked to perfection. Topped with a drizzle of homemade cashew coconut cream icing and warm maple syrup. Brunch will never be the same.
Ingredients
French Toast Casserole
1 16-ounce day old whole-grain, sourdough, or french loaf of bread sliced and cut into 1 inch squares. DO NOT use regular loaf bread. It needs to be a hearty, crusty loaf. These are usually found in the bakery section of your local grocery store.
1 12-ounce box of firm or extra firm Mori-Nu silken tofu
1 1/2 cups unsweetened vanilla almond milk (regular is fine)
1 Tbsp arrowroot starch (powder) or cornstarch
1/2 cup maple syrup
2 tsp. vanilla
1 Tbsp pumpkin pie spice
1/8 tsp. salt
Crunchy Walnut Topping
1/2 cup almond flour or whole wheat flour (almond works best)
1/2 cup chopped walnut or pecans
1/4 cup maple syrup
1 tsp. ground cinnamon
Cashew Coconut Cream Icing
1 cup raw cashews soaked in warm water for 15-20 minutes. You can also boil them for 5 minutes.
1/2 cup shredded coconut
1/2 cup unsweetened almond milk or plant-based milk of choice
1/4 cup pure maple syrup
1 Tbsp. lemon juice
2 tsp. vanilla
Instructions
Slice and then cut the bread into 1-inch cubes. Line a 9 x 13 baking dish with parchment paper
and add the bread. You can also use a nonstick baking dish, silicone baking dish, or use a very small amount of cooking spray on a regular baking dish if you have none of the above. Add the silken tofu, almond milk, arrowroot starch, maple syrup, vanilla, pumpkin pie spice, and
salt to a blender. Blend until everything is completely smooth. Then, pour the liquid over the bread.
Use a wooden spoon or your hands to press the bread down into the liquid until the bread is
covered (hands are best). Cover and place in the refrigerator overnight (8-12 hours). You can skip this step but I would not recommend it. It’s still delicious but the texture is very wet and doesn’t bake as well.

Once you’re ready to bake remove the casserole from the fridge and preheat the oven to 350˚F.
While the oven is heating make the crunchy topping if using.
To make the crunchy topping: Combine the flour, maple syrup, cinnamon, and walnuts in a
small bowl and mix until everything is combined. You may have to use your fingers because it will be somewhat “dry” and “clumpy.” Sprinkle evenly over the top of the casserole. It’s not meant to completely cover the entire dish. Just to add some crunch here and there.
6 Bake uncovered for 50 minutes to 1 hour. You want it to brown on top and throughout.
Cashew Coconut Cream Icing: While the casserole bakes go ahead and prepare the Cashew
Coconut Cream Icing if using. Add all the ingredients to a blender and process until smooth and creamy. Place in the fridge until the casserole is finished. Remember to drain the cashews before adding them to the blender.
Remove the casserole from the oven, drizzle with the icing and serve immediately. 9 Suggested toppings: Pure maple syrup, bananas, blueberries, or dried cranberries.
Notes
i Use hearty, crusty bread that has been set out to dry. Do NOT USE fresh or regular bread. i Let the casserole sit overnight in the fridge for best results.
Silken tofu works best for this recipe. It’s much softer than regular tofu

Big fan of Shane and Chef AJ ❤️. I’ve been a vegetarian (vegan last 15 years) since I was 7. I’ve always been healthy and my bloodwork has been perfect UNTIL a new doctor ran a special lipid test because heart disease runs in my family. I have genetically astronomically high L(P)a level. A deadly and silent killer. So today I’m going completely oil free. So grateful for the both of you.

I had pretty much the same experience with my doctor. I lost some weight and all my blood tests and BP was excellent and when I told him what I did he literally frowned and told me to eat some meat. It's sad so many doctors don't get it. They wanted to run tests to make sure I wasn't deficient in anything. Back when I was asking about my chronic heart burn insomnia and other issues they never checked any of that.

A similar thing happened to me back in February. I went to the doctor because of chest pain and discomfort caused by GERD/GORD (chronic indigestion). The doctor didn't even ask me what I ate! He put me on strong medication (PPIs: proton pump inhibitors). I decided I didn't want to live like that so I went WFPB, with a little calorie restriction to get things moving, and lost 45 pounds, finished a few weeks ago. No indigestion anymore and no need for meds. I don't think a single doctor has ever asked me what I eat, and I'm 47.

I changed my doctor from a doctor who prescribed things that would maintain me to someone who is preventive of any problems I might potentially get or have. Look for the word preventative medicine when you’re looking for a doctor. We even discussed the doctors I follow here when I talk to him. If I ask him for blood tests he schedules them. I only go in once a year to check all my levels. If there was anything wrong, we would discuss that and come up with that path not a pill. 💪🏻💪🏻💪🏻

That’s why I love having a young nurse practitioner! Lucky to have a local clinic staffed by student nurses, overseen by MDs of course, and they don’t blink an eye about being vegan, or looking for ways to approach health with as few drugs as possible! And if they don’t know something, they’re still in student mode and not embarrassed to look it up or ask the MD. So just like I look for the youngest kid around with a tech question, I love young medical professionals!!

In the 1960's if you had a cough the doctor would have told you to change your cigarettes to menthol. A few years earlier he would have blood-let you....if only they didn't believe the TV commercials and Big Pharma sales reps.

@@jase1976​​⁠I have GERD too. I’ve lost nearly 35 pounds and the chronic cough (a symptom of GERD),is gone. I stopped taking the medication prescribed. I still feel like I have a bit left to go until I feel 100% healed. I attribute this to WFPB all the way.

Most physicians study for 6-8 years & out of that time, possibly only 3 weeks is given to nutrition. As for their uniform, other than a stethoscope, the must have is a prescription pad, plus free samples from the pharmaceutical companies

Thank you for having Shane on your show. I am 66 and have been plant based for about 3 years after being pescatarian for 30 years. I make his recipes on a regular basis. I have yet to find any that aren't good. His banana blueberry pancakes are incredible.😍 My husband is also plant based and has loved every Shane & Simple recipe I've made! I have more energy now than ever! I attribute it to my WFPB lifestyle. Keep up the good work Shane. You are saving lives.

I agree ! I make the blueberry pancakes with small variations. The best. I made them last weekend but made buttermilk using half a lemon in the milk and the lemon zest. Yummy.

I find this guy very listenable, and his story is amazing...deep and real! The doctor interactions just blow my mind, illustrating the idiotic backwardness of our medical system. The news about Walmart supplying real health needs is restoring my hope. (And thank you, Chef AJ, for introducing me to another life changing individual!)

I love Shane's recipes. I've been making his Chickpea Curry for years and it is so tasty. I've made it for my non whole food plant based family and friends and they love it. I love Shane!!! I found his website a couple years ago when I went cold turkey after watching Forks Over Knives. His recipes have saved me many times over, and they are my go to place when I need help. He is a genius at making very simple ingredients taste magnificent! NW Alabama here and I also do most of my shopping at Walmart. There are no purple sweet potatoes or Hannah yams to be found and I have to drive over an hour away to get miso paste and silken tofu. So I am excited to explore his blog. I took a break from this video to whip up his 1000 island dressing recipe. I have all the ingredients already! Can’t wait to put it on today’s salad! i am back again after slipping in the past year. i gained back 15 lbs which messes me up, so i am back to no sugar, no flours ,no processed foods and back to whole plant based plus lean meat and eggs occasionally. and I lost 6 lbs in 2 weeks. 9 more pounds to go and if i maintain it, I will be good!.

Legumes like Chickpeas Lentils Beans are a perfect trifecta of Fiber Protein and Carbs. I believe thats why they are great for weight loss.

Of course that Dr. told you that he would check your protein because almost all doctors get no training/schooling in med school on nutrition. Everybody should ask their doctor that question… How much training do you get on nutrition in med school? I do hear that that's starting to change a little bit and I hope it does. Good for you that you're plant-based! I've been plant based and lean vegan for 7 years and you wouldn't believe how it changed my health for the better! Or, maybe you would believe how much it's changed my health! 😊 Hippocrates said, let food be thy medicine and medicine be thy food. I do believe he was a pretty smart guy. 😉

Great video, Shane! The first syllable of hummus is not pronounced like hum, button, futz, cud, crud. It's pronounced like push, cushion, good, could, should, foot. No maple syrup for me. I love sweet but not with savory. Brown rice is great but farro, sorghum, and kamut are better. Cook in IP of course. I second the emotion on Shane's IP potato soup! Excellent interview!

@@judypowell1358 I'm from NJ! In the word "foot" the vowel sound of the "oo" is the same exact vowel sound as good, could, wood/would, should, cushion. And also that same vowel sound of the first "u" in hummus! C'mon, girl! You're a fabulous Southerner! It's not the vowel sound in "hum" or "hush" but instead it's the vowel sound of push for hummus.
