I'm not a vegan; I'm not even a vegetarian, but I wanted to make a video recipe for these vegan burritos.
This recipe was inspired by watching Mike Jeavons ( / mikejtvmusic ) 'Week on Vegan' - and in particular, his response here ( • A Week After A Week on... ) to some of the criticisms he got in his comments.

For days now. I can’t stop. It all started with stumbling on some scambaiting, and now I’m watching a man eat ant pupae, build toy cars and cook vegan burritos.

Naaah personally I think this channel is not for binging; I only watched these videos in moderation, saving many videos unwatched in case I'm bored or just need to watch something. That's because his videos is so easy to watch or even just listen to.

I hate celery and can only buy it in large amounts where I live so I wouldn't use it either way.

If you can't find the peeled wheat, you could use pearl barley which is available everywhere and does the same job. I use it now in place of rice.

This video is nearly 4 years old and to hear you say that you will be taking the food to work really did make me smile. I am so glad that you were able to be in a position where you could take that leap of faith and turn your passion for documenting life's oddities into a full-time job. I hate how in Alberta, instead of saying "vegetarian" or "vegan", it is called "plant based". Lipstick on a pig. It's like they are afraid to say what it really is. Like calling marijuanna "cannabis". Yeah I know when it was illegal it had all sorts of names, and cannabis is the real name, but come on! Call a spade a spade.

@@catslove3884 there is a difference tho, not sure if im understanding wrong but plant based just means uh.. that and vegan is a combination of plant based eating + animal rights activism and stuff, so not just a dietary restriction. but looking at it like that then its weird calling a factory product vegan lol

@@catslove3884 People have different cultures. Where I come from its pretty common to hear people use the term cannabis. As you mentioned, its the actual name, so whats the problem with people being more correct? It's not about people purposefully disguising their intentions, its just that they have different norms than you do I think terms are better when theyre more intuitive to figure out if you dont know thier meaning already, less likely to cause confusion that way. It's very obvious what plant based means, it means its based on plants. But vegan? Where does that even come from? Is it just a short version of vegetarian. And vegetarian seems to be defined off the word vegetable. And since the classification of vegetable has literally no basis in biology, it depends entirely on how you use the ingredient culinarily. And defining a group of people who only eat a certain type of ingredient by the culinary usage of the ingredient rather than its chemical composition or biological categorization seems less reliable and sensible

@@catslove3884 This is an extremely absurd take, the cannabis part is nonsense. It's not about hiding the dirty M word, some dialects simply call the drug Cannabis. In British English it's common to hear. That's just the name of it

This reminded me of growing up in a house where everyone liked different food. We would eat things like curry in stages as things were added with my parents eating last once everything was in!

Things that are commonly used in Mexico are: cabbage for a nice crunch, and avocado or guacamole for a creaminess. I think your filling would be great as a salsa for tortilla chips.

I love Mike Jeavons :) I think the thing that baffles me with vegan food is the emphasis on replacing meat. Why bother with fake meats and trying to replicate it when you can make a delicious meal as you’ve just done. Eat vegetables and enjoy them!

Im vegan currently, and besides beyond burgers (which are incredible juicy and better than a lot of regular burgers that I've had) I don't consume meat substitutes. That is NOT what it means to be vegan at all

My partner is an old school vegan so meat substitutes aren't on our menu. There is a new wave of vegans that are happy to munch on a pretend bleeding vegan burger however.

As a relatively new vegan, (6 months) I used to absolutely love meat (steak every weekend). Eventually the ethics got to me and forced me to switch, but I still miss the ease of picking up a double cheese burger or a KFC bucket when I didn't want to cook, meat substitutes fit the spot (particularly in regards to fast food especially that vegan options at most big chains are awful). But I digress, vegetables are nice too :)

The reason celery becomes very "savory" is that it releases natural msg, which in a lot of cooking is used to make umami (savory) flavours taste even more umami. Hence why Chinese takeaways etc often taste better, or at least different, than what you can prepare at home.

@@GigaBoost I meant natural msg as in the version of it that would be found naturally in naturally occuring food. Not the exact same chemical, more the same kind of thing. Sort of like how someone says natural sugar, it's not going to be the exact sugar we're referring to but it's more a go to way of saying how it would be naturally found

Only 5,000 views? That's disappointing. I can't say I like most of the ingredients you added or that I'm anywhere near being vegan, but you're a fantastic cook and it gives me good ideas for my own cooking. A shame more people haven't gotten to see this.

This is actually quite a healthy meal, if we're going off of what the "Healthy Eating Plate" system suggests. This vegan burrito consists of mostly vegetables, including legumes, which offer a great amount of protein. It also has a suitable amount of complex carbohydrates coming from whole grains (you could use an Ezekiel tortilla if you want to be a nerd about it). And the burrito includes healthy fats coming from olive oil (important for helping your liver function, which in turn helps out your metabolism). All around a great nutritious, balanced and sustainable meal - quite inexpensive to make as well. This same recipe is also really easy to turn into a non-burrito dish, for example the soffritto would be a good base for a soup. You could also just up the amount of whole grains, ie peeled wheat or pearl barley, in place of the tortilla, and make a sort of "burrito bowl" type of dish. Well done! :}

this might sound demanding on your part but I do enjoy the bits where you cube or slice the vegetables or any ingredient you use in a particular meal. It's kind of satisfying to see (even though sometimes it looks uneven) especially when binging these food videos you make. I truly watched for the Scambait content, yet stayed for this. I'm not disappointed one bit.

I love your work in general - the cooking, the scambaiting, the lot. I really admire your wit and sharpness to respond to people's criticism, and given that it's your content it astounds me the number of times you had to explain your actions. Dealing with vegans appears to be a full time tightrope walk job, you have dealt with it well and I hope you keep up the good work!

@@michaelbalfour3170 I'm speaking through experience; the chances of them requiring special attention are quite high. I also know a few who are super chilled, so perhaps unfair to generalise as it ultimately boils down to people, not their preferences, choices and orientations.

really enjoying these cooking vids, totally different from what I would normally view on here but really interesting. I personally have never been a fan of mushrooms, despite trying them periodically cos I think I should appreciate them, but this has peaked my interest.

When I went to an Indian restaurant and tried a proper curry the last thought was 'this doesn't need any animal protein'. I'm not a vegan, not a vegetarian, but I do eat vegan and vegetarian meals. Not because I have to, but because it wouldn't make any sense to add meat to those dishes. Just like it makes no sense to make sausages out of tofu. Thank you for the video :)

Yes! There is a wonderful vegetarian Indian restaurant here in South Florida, about 100 miles away, but if we make a day of going to the other coast, we make a point of eating there. Absolutely genius use of flavors, and you never even think about the fact that there is no meat in the food. I always leave stuffed to the gills and with a lovely packet for next day's lunch which will be the envy of my co-workers. I feel a road trip coming on....

I'm glad you don't talk about "replacing meat" as if meat was inevitable. Vegetarian and vegan food ought to stand up for itself, not just as a substitute for something else.

Pouring oil over the food? Just makes the food absorb the oil, you should pour oil into the pan leave to heat up THEN add the ingredients.

@@TobyFloof I don't know. Maybe read your manual and watch lots of videos before you start using it. Follow directions and you'll be fine. Don't be scared of it. It's a very safe machine. Just don't try to open the lid when it's under pressure and the little pin is up. I find that it's a matter of trial and error to find when food is cooked to your liking. Try a recipe once. If the food is over or under cooked to your liking, then change the cook time slightly until it's to your liking. Always make sure to have a cup or two of liquid in the pot so it'll go to pressure. Don't put a roast in without a little water or broth in the pot. Don't try to fry with oil under pressure. And cook a pot of vodka under pressure.

The way you rolled it is interesting Where I come from, a burrito has a tortilla that is completely closed around the filling A Taco is very similar, except it isn't closed, its open-ended on both sides and folded rather than rolled (though this is not a rule) The way you rolled it makes it seem to me as "half taco" and "half burrito" A Burraco. It's actually pretty cool.

For those who don't want to get over their celery hate, many sites suggest fennel, jicama, green apples, celeriac, leeks, bok choy, broccoli, radish (uncooked) and a lot more as possible replacements!

Honestly, having grown up with a lot of Mexican, Central and South American friends, I'm used to a lot of vegetarian types of burritos, pupusas, and empanadas. The hard part would be going from vegetarian to vegan, since most tortillas are made with lard and leaf lard isn't really easy to find here in the US. But the ingredients? My personal favorite burritos are just rice, beans, black olives, homemade salsa, sour cream, and cheese. The sour cream and cheese are easy enough to leave out for pure vegans.

Absolutely spot on. As soon as you think what am I going to do to replace meat you set yourself up for failure. I'm an omnivore that enjoys vegan and vegetarian food but I hate meat substitutes. Just let the veg sing.

That was wonderful! Each time I see you use your dried mushrooms, there seems to be some little sachets in the lid of the jar. Am I right in thinking they are the little silica gel sachets that are often put in stuff you buy on the web? If so, I’ll do that too because I get reduced mushrooms in the supermarket, slice and dry them myself. They’re quite a different flavour when dried, and useful for vegans to get that deep umami flavour. Thanks

Chilli has always stumped me. If it's in any food I eat, then that is the only thing I can taste. A rather unpleasant heat that blots out everything else. I have no problem with Black pepper, English mustard, Horseradish, even real Wasabi (not the green-tinted bog standard horseradish, that some companies use), does not have the effect. I wonder if it is connected to my inability to taste Coriander as anything other than soapy tinfoil? Your recipe looks superb, though. Have to give it a go sometime. Thank you.

@1:00 this is what I've always thought about vegetarian/vegan food! Yes it may boot some of the audience out the way (but hard-core meat eaters would never care in the first place lets be honest), but rather how to construct casually meat/animal product free meals which are still amazing to eat.

Old video - I know - but could help me? I cannot find peeled wheat -anywhere- and the internet has a surprising lack of answers. Is it the same as hulled wheat?

Peeled wheat is wheat that has been completely dehusked but then also tumbled to make the bran layer softer and more permeable. You might find it as pearled wheat. Turkish/mediterranean/Middle Eastern grocery stores seem to have it usually. If you can't find it, then regular wheat (sometimes called 'wheat berries') will do - this takes longer to cook, but still within the cooking time of a slow cooker dish like this

I am curious; Have you considered trying vegan cheeses just to see how they compare to what they're trying to replicate? Me, I am lactose intolerant, so if I want something creamy or cheesey (as that is a common thing for lactose intolerant folks to miss after being used to having it during their childhoods), I've gotta go a lactose free or dairy free route. The rest of the house can digest cheese just fine, so I've gotta make do where I can. I can testify that lactose free and dairy free ice creams are amazing.

"I'm going to be taking this to work with me" I do wonder how many of these dishes Mrs Atomic Shrimp actually gets to eat :D Have you tried cooking without oil? A slight tweak to the cooking method by "frying" the veggies in water could have made for a 100% Whole Food Plant Based meal.

From what I gather, she has a much lower tolerance for chili-based hot foods compared to Atomic Shrimp. Which is fair; not everyone has a taste for spicy foods.

Nooch adds a nice cheesy flavor and some protein as well as B vitamins. You might know it as vegan nutritional yeast.

Have you ever tried cooking without oil, but try steam frying in either water or stock or even wine? You do get a very similar result x

I steam cook mushrooms as otherwise I find they take in too much fat, however, many things need the oil in order to get hot enough and go that lovely brown

They've come a long way in the last few years. I remember trying one about ten years back and it was an absurd crumbly dry brick of gritty salty paste. Now they are pretty passably cheesy. The last one I tried, I would not have known it wasn't dairy

The very point of this video was that in vegetarian/vegan cooking the point needs NOT be to substitute meat. Veggies make perfectly delicious dishes on their own.
