Oh my goodness! Reminds me of summertime in Ohio. Rhubarb grew wild in back yards. I will be making this!!

LOVED IT! I actually used frozen organic strawberries (and omitted the rhubarb because I didn’t have any at the moment) and added some flaxseeds and ground coriander to the crumble for extra nutrition. It is delicious! Flavorful, aromatic, delectable! Thank you, Jill! Another winner!

When I don't have all the ingredients of a recipe or have things to use up, I use it as a guideline. Here's what I did & it's PHENOMENAL!!!

SO happy to note SO many views!!! I'm going to use this recipe and others of yours when I do my upcoming Taste of Life Cooking With Plants program on our local community TV station and add in how to make vanilla nice cream to go with it. I may use peaches/blueberries!

Thanks for this delightful recipe. Gentle reminder to viewers that most vanilla extracts have refined grains and sucrose. Sweet Laurel Bakery out of California makes a great one without those. :)

Hi Jill -- Looking forward to this. It's in the oven as I write. My container is deeper and narrower than yours and I was wondering if there's a way to test if the fruit is fully cooked (like you might test a cake by inserting a knife before removing from oven).

It is done when the rhubarb is soft.
