Italian here: pesto is a sauce tipically of vegetables and oil PLUS nuts and or cheese. A sauce is anything liquid cooked, and a sugo is what remains after a long cooking procedure. So the one by Carla is a Basil sauce, while if she would have put in cheese and or nuts it would be a pesto, even if inside a food processor.

I think it was the casings. She probably used the package weight and based it on that. I suspect the weight of the casing of the 3 or 4 links she used would have been the weight of the last meatball.

I think for the pesto paste with bread, instead of using oven, toast it with flame burner. it will make it crisp on the bun with paste melted into the rolls.
