Love carrot cake. These cupcakes look quite delicious indeed but I prefer the addition of chopped walnuts or pecans to the batter. Even some walnuts on top of the frosting only will do. 😀👍

That's so funny. Literally the only reason I hardly ever eat carrot cake is because it's always covered in the cream cheese icing. I just can't stand the frosting. I'll have to make these but leave out the icing. Also, I made bread with beetroots once. The dough was BRIGHT pink but as it baked all the colour went away. Can you tell me why this happened?

Ground cloves would work too. But you can just omit the nutmeg and add a little bit more of cinnamon and/or ginger, it will taste just as good.

Just leave it out. You could use a tiny pinch of allspice or cardamom though. I would not use a quarter teaspoon in either case though, just a tiny pinch, like less than an eighth of a teaspoon.
