Lovely recipe. Shaanxi food seems very interesting, but possible to recreate at home here as I can get a lot of the ingredients in local recipes. As a lover of Szechuan and spicy food, the sauce looks like a flavour bomb.

I was so excited when I saw these noodles and you confirmed they were from 山西. I went to China for the first time in June and I visited with a friend in her hometown of Xi'An. We had the Biang Biang Mian which looks a lot like these 😊 Loved hearing 泡馍 in the history lesson. It was my favorite, along with 肉夹馍. Can't wait to go back!

These noodles are actually from 陕西 not 山西. They differ in the tone for "Shan". The one in the video (whose capital is XiAn) is usually written as "ShaanXi" (two A), whereas the one you wrote is usually spelled "ShanXi" to make a distinction possible in Latin letters. It's super confusing for us foreigners because both provinces have famous noodle dishes and to make matters worse, they border each other 😅 While 陕西 is famous for BiangBiang noodles, 山西 is famous for 刀削面 (knife cut noodles), which are also awesome but entirely different.

Honesty I think Chinese food is the best in the world. Definitely my personal favorite. Can’t wait to try this recipe. I clicked on the video because the broth looked exactly like a broth I had at a local Szechuan restaurant yesterday for the first time in a wonton dish and it was amazing. Just like you said it wasn’t really spicy. More savory and salty. I hope this is basically the same.

Wow, i have to try that. I wonder what other unique cilantro dishes are out there that i never heard of. Huge fan of cilantro. I personally use alot in my fajita borritos(mccormick fajita seasoning, chicken, grilled serrano peppers, lots of lime juice, bonus salt to taste, extra sharp cheddar, & thoroughly cleaned cilantro added generously like lettuce inside of an extra large burrito wrap....have plenty of sour cream on the side to eat via spoon to balance the heat & extra lime to add a twang...wont regret it).

Thank you so much for giving alternatives to the cilantro and red chilli powder, as I am in the cilantro-taste-like-soap genetic group and I cannot eat very spicy foods like red chilli. So the alternatives allow me to make this recipe, too! Also, the history is good to know and I really enjoyed your recitation! It is such a beautiful language, even if one doesn't understand the words, but the explanations you provided were very interesting! (I slowed the video and read them with the volume off after listening first, so I could understand what each line meant.)

I made this recipe for my wife. Turned out extremely delicious. But I also messed up the recipe a bit because I mistakenly added 3 tbsp of red chili powder so that over powered the dish. Cilantro belt noodle using kitchen aid is super easy. Thank you for sharing this recipe with us Mandy

I just planted some more seeds for cilantro so I can have an abundance for the fall. I look forward to making these. I have some in the garden but I am growing it out to seed for the coriander and saved seed for next spring. I will also try spinach and other Chinese greens that I just planted for the fall. Other than spinach and cilantro, is there anything else that is commonly used in Shaanxi, other provinces of China or even here in the west?
