Jack, you forgot the most important vegetable for the ratatouille, the eggplant! Can’t be a real ratatouille without it. Beside that, you’re the best!

It looks good, but without aubergine and with basil, it shouldn't be called ratatouille. No need to be agressive, would you call an hamburger with chicken and pepper instead of tomatoe?

LOL...That is NOT Ratatouille" ! It's more like another one of your inventions. So here is how you should do it Ingredients: eggplant, zucchini, red bell pepper, tomatoes, onion, garlic, thyme, persly, bay leaf (and sweet basil, optional). ALL FRESH! No squash, no tomato paste, no canned tomato........ Method: Gently fry each veggie separately in olive oil (no other oil, no butter) until soft and golden (about 8 to 10mns each). Gently fry garlic (1minute). Place veggies in a pan (Dutch oven will do nice), add thyme, parsley, bay leaf, salt and pepper, and cook very gently until you obtain a marmelade-like consistency (at least 4 hours). Make sure it doesn't burn at the bottom. Add a bit of oil and stir if it does. This dish can be prepared in advance. It tastes better when reheated. It can be eaten cold.
