One way of cutting the meat is to freeze it a bit to make it firmer. That way makes it easier to cut thinner slices.

It’s called salted Mergui fish. The Malays called it Ikan Kurau. Hokkien Chinese called it “Tan Lau” It’s dangerous to work with a dull knife.

Hmm...air fryer is generally a replacement of oven. Basically it’s function is to grill or fry, so u will have some limitations.

You need replaced something salty, maybe fermented black beans or salty vegetables (ham choy). But salted fish is the Best....
