General Grievous is actually the perfect fighter to implement the "Just shoot blasters at the Jedi" gambit since he has cybernetic components and 4 arms. Use his implants to target 4 different parts of the Jedi's body and fire all four blasters simultaneously. If the shots are well distributed, at best the Jedi can block only 2 of those 4 shots with their lightsaber. I highly doubt they are going to be able to dodge the other 2 shots for a prolonged period of time, particularly if Grievous keeps shifting the 4 target points.

What's interesting is that we see him employ strategies to unsettle the jedi in the old 2d cartoon. That was the best portrayal of Greivous imo. He struck terror into their hearts, breaking their focus.

If I recall there is some interesting background on the creation of Grevious. His first appearance in the 2004 cartoon he was too menacing and George didn't want him to scare younger kids which is why he drastically scaled back his scariness which is why he just ran away every time in the movies. Also right at the end of the cartoon he was fleeing Coruscant after kidnapping the Chancellor Mace Windu force crushed Grevious for a moment which is what led to his cough.

Honestly, shooting the Jedi ain't the worst idea so long as he combo it with other weapons. Just keep the Jedi busy with two Sabers, then have the third arm shoot at them and maybe the fourth arm can have a flamethrower attachment too. Make them multitask, like using Force power/dodging/deflecting at once with the different weapon types.
