in re: overcooked pasta: until fairly recently (20th century), pasta was usually cooked way more than we would consider OK. At least, that was very common in Italy. (Personally I'm happy with the way things are now.)

I cooked this spaghetti yesterday. They are really delicious. However, they are extremely filling! The sauce is basically a "bechamel" variation and therefore very powerful.

Surprised he didn’t use the twist and drop of pasta in the pot, that method works so well. As another alternative is add half a lemon zest and the juice. 👍

YES, I like this although I will need to double for a whole 16oz of pasta. I plan to do this and sub the stock for seafood stock to go along with fish or maybe just add some jumbo lump crab, shrimp to this dish:) Brilliant. Thank you!

@@mirandamom1346 Violife is the only one I can find in the US in my local supermarket where I live that is grateable and the best meltable. I honestly can barely tell the difference that it's vegan, and I make grilled "cheese" for my husband and son and they have no idea it's vegan. My fave is the smoky provolone slices but they also have block cheeses. I've tried the feta and it's darn close to real feta IMO. As far as parmesan though, I haven't found anything but I was going to look to have for this recipe. I usually just end up using nutritional yeast for parm, but my son doesn't like it so I'm going to try to find something more parm like. I think the best options for vegan cheeses are probably at co-ops or Whole Foods type stores, so once in awhile I'll head into one of those and see what's new. Also you can find homemade parm recipes online that use a combo of cashews and nooch that are good, but I want something that's closer to the real thing. Good luck!!!

I absolutely adore pasta so I try different sauces. This one is a must try for sure. I agree, overcooked pasta is the worst, and I've had it served at a restaurant (unbelievably) almost turned into mush.

I bought saffron and this is the recipe I'm going to use it in! But abpout breaking spaghette I cook for one and it's a waste of energy bringing a stock pot to boil, so I break the pasta to fit. Been doing it many years and nobody can tell me it makes any difference.

Believe me! in Spain pastas recipes come from Italy The only authentically Spanish thing in this recipe is the strumming of the guitar at the beginning of the video... the rest is as iconically fake as a Loewe handbag... made in China.
