I love cooking melongen🇹🇹Trini word for eggplant,my mother used to curry it with saltfish or beef.I haven eaten roasted with ochres 🇹🇹baked in a spicy tomato sauce.Ria you have given me another recipe to add to my growing list.by adding potatoes &channa to the mix.I can’t wait to try it and wash it down with a cold solo,and some kuchala on the side🤗🇹🇹👍🏽

Hi Ria, I am enjoying your recipes. My husband is from Penal, and I am American, we live in southern California. I have been learning how to cook different kinds of meals, and other foods from your country. I was also given the Naparima cook book from one of my In Laws; I love it. I want to try Buss up shut again, but a little nervous.. I didn't do good the first time.

Ria, is there a reason for not fully peeling the aubergine/egg plant?

If you use all the skin it might be overpowering and affect the final results. I like a nice balance but sometimes I pref it without the skin.
