Right, so, shelves need to be properly supported by shelf triangle brackets and those need to be embedded into the parts of the wall called "studs". Studs are wooden boards, usually about 2 to 3 feet apart evenly spaced depending on the decade it was built but there is a really cheap little device at your local store called a "stud finder" which is used for exactly two things: crude jokes about how much of a stud the person in front of it is or is not, and locating the stud in the wall. Once you locate the stud you can place the bracket and insert a screw into the bracket and stud behind it. Next, you can align the bracket such that it is flush with the edge of the wall, if you have one then you can use a "level" which has a little tube with a bubble that sits between the lines when it is level with the earth's gravity. Next you have to evenly align the second bracket with the height of the first one and then repeat the process. If you still want to fill in those holes, just get some white spackle or putty, a strip of sandpaper, and the correct color paint. Sand the holes very lightly to free any debris sticking out, then apply the spackle by shoving it into the holes and a thin layer around the hole, then even out the surface with a wide blade, preferably a spackling knife, and finally leave it to cure for a day or two before painting over it.

You can put screws into drywall but you need to put a drywall anchor into them first. To repair the wall you would just fill, sand, and paint and then drill a new hole to put your drywall anchors into and then mount the shelf so the screw goes into the anchor. You also have to be aware of how much weight you put on a shelf that isn't into a stud. Ideally you would use a stud finder and mount the shelf by screwing into the studs
