Fuhrman is so right about your tastebuds changing over time. I enjoy eating healthy as much as I used to enjoy eating junk food. I would rather have a bowl of frozen blueberries than a bowl of ice cream. I don’t miss the junk food at all .

That's the part that doesn't get publicized. People think healthy foods don't taste good, and life will have no pleasure without fat and sugar and bacon. I'm enjoying food more than I ever did when I ate junk and animal products. I don't think a healthy diet can be maintained for benefit down the road. But if a diet produces positive effects right now, then I can stay on the diet. And the healthier and "wholer" my whole food vegan diet gets, the happier and more calm energy I have.

In the '80s, when working in China, I came across a report of a study of areas of the country with an unusual percentage of centigenarians. The study was looking for common lifestyle factors, and identified three: high altitude, physical labour and a diet high in beans. This is about third-hand and I can't vouch for its accuracy, but there it is FWIW.

Thank you for this talk. I was one person very confused over lectins. I'm going to be adding beans into my daily diet and hopefully my gut will adjust and the gas will go away. This information series has been SOOOOO WONDERFUL 🎉🎉🎉. Thank you for opening up this weekend marathon. I desperately wanted to join your group. But I just don't have the money. 11:41. Dr. Greger explained that there are 2 types of plant estrogens: alpha and beta. The alpha plant estrogens are the cancer causers found in plants like hops used in beer making, while soy has the beta plant estrogens that are cancer protectors. Yes, keep the soy.

Bean are seeds, once you soak them you start the germination process that makes the seeds go into being a live vegetable. Eat beens that already got a little root coming out.

I find it beyond belief that formulas for the life-extending properties of beans are truly so specific - X percent increase for x number of spoonfuls per day. But what do I know. There are also cohorts of vegetarians about in the world equally as willing or more so to speak against meat/dairy/fish/chicken. And science takes a back seat to money/politics/power it seems - at the peril of disease, bad nutrition, and early death. A point is that OPEN discussion of true science rather than power positions is required. Thanks for the discussion.

I would also like to add that although we ate lots of vegetables snd fruits in Spain we equally eat lots of meat, fish and seafood. We have such variety of pork sausages for example like chorizo.

Thanks for the video. I'm from Spain and the main beans we eat there are brown lentils and chickpeas. We normally sock them overnight before cooking.

The only thing I'd be careful about is how my beans are grown. Lentils and some beans (at least in Europe) are often the most glyphosate laden.

Can gluten and the other gluten like substances in grains and other plant toxins like nightshades. high histamine, high oxalate, high salicylate and high nickel have the symptoms that result in those who are sensitive be negated by proper cooking?

Most people seeking health whether plant or animal eaters avoid dairy and soy along with seed and vegetable oils, sugar, caffeine, alcohol and tobacco. Dairy and Soy are among major allergies.

@@Percyfaith7 no, we wouldn't advise that you expose yourself to any known allergies! However, we would conversely advise not to avoid something on the basis of it being a common allergy, if you're not allergic to it yourself. If in doubt, seek testing!

I read that oxalate crystals can not be cooked out of high oxalate foods. I had some oxalate dumping and it was painful. I understand that oxalate dumping can go on for decades. Many beans are high oxalate.

Oxalic acid absorption from the GI tract may be reduced by calcium citrate supplementation before meals. Vitamin B6, arginine, vitamin E, chondroitin sulfate, taurine, selenium, omega-3 fatty acids and/or N-acetyl glucosamine supplements may also reduce oxalates and/or their toxicity. Excessive fats in the diet may cause elevated oxalate if fatty acids are poorly absorbed because of bile salt deficiency. Unabsorbed free fatty acids bind calcium to form insoluble soaps, reducing calcium's ability to bind oxalate and increase its absorption. Therefore, taking bile salt supplements could also be helpful. Supplementing with taurine (if low in a plasma amino acid profile) may also help to stimulate bile salt production, leading to better fatty acid absorption and diminished oxalate absorption. Magnesium can help reduce oxalate absorption when taken at around the same time. These effects disappear if your intake of magnesium and oxalate differ by 12 hours or more. You can take a magnesium supplement or potentially increase your intake of magnesium-rich foods. Research suggests that boiling and steaming can significantly reduce oxalate content (roasting, grilling, or baking have little to no effect on oxalates). Soaking or sprouting your pulses before cooking can also significantly reduce oxalate levels. Finally, staying hydrated with water can also help flush out oxalates and prevent dehydration, which can otherwise play a role in kidney stone formation for some people.

What I think of the "docs": Hyman = Spot on. About everything. Yep, pretty much. Fuhrman = Underestimates the healthfulness of wild caught (Alaskan) salmon and pasture raised eggs perhaps, etc. (I know top quality chicken and turkey doesn't exactly impress Dr. Fuhrman...) Overestimates how much fiber most people can consume comfortably without eating a fair bit less. In other words, you're going to consume fewer calories when eating a lot of beans, veggies, etc. So that would take some getting used to for many folks. I suppose thats the whole idea... Berg = Are you SURE that that many pasture raised eggs a day is that healthy? 🤷‍♂️ I mean, I've been eating up to 4 soft boiled eggs a day more recently... 🤷‍♂️ Berry = Yep, he's a meat fan... Barnard and McDougall = Meh. Greger = The guy is INTENSE... Intensely VEGAN, that is... Gundry and Glidden = A little odd, a little "quacky", some good points they make... Weil = The ol' anti-inflammatory diet. Been around since before 2000... Axe = Has stuff to say about most every food, sounds more supportive rather than critical of people esp., leans keto, very personable.

I find it surprising that Furman didn't explain that Almost ALL soybeans other than ORGANIC soybeans in the US are GMO which are bad for everyone, and any benefits from soybeans reported were from ORGANIC soybeans only. Also, I used to love Goya refried pinto beans which have been cooked twice, but at some point, I started getting such severe, painful bloating after eating them, I even almost went to the hospital, I even got occasional heart burn, also. When I stopped eating them, I didn't get bloated anymore. That made me think Dr Gundry's warning about limiting lectins was probably on to something. Those Pinto beans by Goya are probably mostly GMO these days, also. The only thing I don't like about the idea that nightshade vegetables have more lectins is cutting out raw tomatoes, like the beautiful, better than organic beefsteak tomatoes they sell in regular produce mercados in Mexico City. I love those so much, especially in sandwiches, I could and did eat them every day, and never got tired of eating them, although I do remember Martha Stewart instructing to always remove the seeds and skin from tomatoes before eating, and the seeds and skin is where most of the lectins supposedly are. I never experienced any bloating after eating lots of raw tomatoes with the skin and seeds included, but agree they should be thoroughly washed with white vinegar before eating.

Plant or Animal if people would just concentrate on REAL whole quality, seasonal, local / fresh it would improve all aspects of world health. Beside food there are at least 7 other factors that are of more importance for physical health.

As far as I know, optimal preparation of beans requires pressure cooking.

The speed you gain with pressure cooking, may actually lead you to not soak properly and have a not properly prepared bean. The elder in southern italian towns soak beans for at least 24 hours (changing the water) and then cook them for hours and hours in a clay pot on or beneath the fireplace.

Soybeans are GMO. They are genetically altered with a built in pesticide. And they most certainly raise bad estrogen levels causing males to become more effeminate. And they are a very poor source of protein in that they do not contain all the essential amino acids.

GMO soy is fed livestock. So I'd worry about this if i were a meat eater. At the grocery anyone paying attention can make sure their tofu is organic and non GMO. It's well indicated.

@@j-sm4554 According to the FDA, 94% of American soy is GMO. I agree with you that chickens and beef are also fed GMO corn and soy. Grass fed eggs, chicken and beef have become very popular. That's in my diet.

@@j-sm4554 Some people are almost religious about being a vegetarian. I find that it lacks B-12 and essential amino acid proteins. This often makes them somewhat weak and anemic. This is what God says, "he who is weak eats only vegetables." Romans 14:2

You're funny. It's like every time your write a comment you pull out one of the famous myths trying to invalidate veganism. Nothing new under the sun... Here's some food fpr thought: About 40% of Americans are b12 deficient. But there are only 3% of vegans. I'll let you do the math... Also the b12 you think are consuming directly from meat has itself been given to livestock as supplement. So you are actually consuming b12 supplements yourself...

His credibility just went down the toilet, "if you eat enough beans you live forever" May have been said tongue in cheek, but a daft thing to say Btw, Dr Gundry doesn't say not to eat beans, just make sure you prepare them correctly, soak them then pressure cook them thoroughly.

I am inclined to trust Dr. Grundy's Idea that lectin is bad as he looks even younger than Dr. Fuhrman despite the age gap

Maybe the studies are more important than the looks of just 2 people? Looks don't indicate health necessarily. But if you are going to make decisions on your health based on people's looks, you at least a large group of people to make a scientific decision.
