love this idea- I think I may try with a pumpkin filling and a pecan pie filling- perfect after a huge Thanksgiving meal- (we have a family member that makes a mean apple crisp (family tradition instead of pie) need to fill with other things so that is why I"ll make with different toppings (also a scoop of homemade ice cream) these cookies have endless possibilities thanks for sharing
