Also cassava flour can be used 1:1 for wheat. It works great! My daughter and I add a little xanthan gum to prevent crumbling.

Dr. G, I have been on Plant Paradox's lectin-free dirt for almost a year, has cleared up a lot of things for me, and I have recently found Dr. Sten Ekberg talking about Keto or low carb. Diet science is rapidly evolving more so than any time in the last 45 years that I have been a health food person, and you are making a very significant contribution, for which I and many others thank you, I'm also trying to learn how to cook things like deserts or baked goods. I like the substitution concept that you are embracing in this video, like what to use instead of regular wheat. Never have found a good substitute for spaghetti in Walmart.

I love cassava flour! Also for bread: I take white wheat flour and add yeast and let it rise 6-8 hours. It almost tastes sour at that point. My theory is that the lectins are largely "eaten" by the yeast with LONG TERM rising. I have not noticed any symptoms return. What do you think?

With your flour alternatives I mix a cup of vitamised cooked beans ( chick peas are my favourite or black beans for chocolate cake) as an egg replacement. My younger brother was allergic to eggs. I line a baking tray with greased paper and the inch high cake takes an hour to cook. If too many beans are added it can take 1 1/2 hours. I often add pumpkin to add to the moisture and flavour. I then cut the trays into squares and freeze.

I have found slivered almonds or skinned almonds work great in place of cashews and have a more neutral flavor than macadamia nuts.

Unfortunately, it is not from A-2 dairy which is recommended. Italian or French butter is the best as cows from that region produce A-2 milk which does not have the inflammatory A-1 dairy lectin. President butter which is from France is great if you are able to find it.

Ferment, ferment, ferment the flour with sourdough starter, this process removes most of the lectin and gluten because the starter eats it. I have yet been able to create anything eatable using the alternative flours and I have yet to find a recipe Gundry created that is eatable. Sorry, no I'm not because I ferment, ferment, ferment.

Lacanto sweetener unfortunately contains more (possibly much more) Erythritol (sugar alcohol) than monkfruit extract. Dr. Hyman advises against too heavy a use of sugar alcohols. What say you?

You drink a tea of mate, how would you consume large quantities? Since I grew up drinking it, I can share that some people drank a little sip at the time all day long, some people couldn't because it would give them arrythmia. So ... Try it and see how it works for you. But, careful with the added sugar. It has many great benefits, is really good. 🙏🏼

I have been monitoring my blood glucose level with continuous glucose monitoring device, and cassava flour bread, even relatively small piece of it skyrockets my blood glucose level. Similarly, chestnut flour also spikes it, albeit looks like less than cassava flour. I wonder what Dr. Gundry thinks about the impact of cassava flour on blood glucose level.

Wheat still has lectins and if it's not even a sourdough, I wouldn't dare touch it.

The lavva plant based milk taste awful! Very sour like expired milk and it’s not expired. I am returning them to Whole Foods. Although I like pili nuts but not a fan of lavva, they add tapioca starch to their yogurt. And Lily’s bloats me very bad, they claim “stevia sweetened “ it’s mostly erythritol sweetened. Why can’t they be more honest? 😞 sad
