Parabéns ! A receita que mais se aproximou da receita Winkel 43. Eu já tinha feito inúmeras outras receitas, porém nenhuma delas ficava igual a da Winkel 43. A sua receita está muito próxima da original. A massa fica crocante, saborosíssima .. e as maçãs não umedecem o fundo da torta… deliciosa receita.. você descobriu o segredo da Winkel .. fica PERFEITA !!! CONGRATULATIONS 😊

I tried one yesterday. Next time I shouldn't cook the apples too long & use less white bread. So the filling will be moist. Thanks for the recipe!

Thank you for your comment! The top crust is kind of fragile. Maybe you can use shape slightly warmed knife to cut nicely?

I’ve never seen or heared a Dutch person use white bread crumbs in their apple pie. I (and other people too) use some custard powder to ‘catch’ the moist of the apples. I do not know what they do at Winkel 43.

Indeed I heard about custard powder being used for this kind of crusty pie. But since I am not used to it that much I stuck to my way 😊

I agree, I have eaten Winkels appeltaart and I'm sure they had custard powder in it. Possible a very thin sprinkle of panko breadcrumbs in the very bottom. Seems like a lot of bread in this.

looks amazing! do you seal the top layer of dough or leave it loosely so steam can escape?

I just place it on top without pressing down. The top and side doughs will merge together while cooking. Enjoy! 😀

I too have been stumped by the "cakeyness" of the Winkel Pie... I like your approach by adding bread to the mix. Do you know if that's there own method or is this a workaround? I imagined incorporating some cake mix somehow might be the trick.

I use bread in my japanese styled apple pie, so I thought it might work here too. I tried to match as closely as possible what I could remember of the Winkel taste : without this, the apples would let moist out into the tart dough. So the bread definitely helps keeping it crispy and crumbly. To be honest I don't know if they use this same method. If you want to try something else, I probably would not add more flour, maybe something almond-powder or bread crumbs based? 🤔

Winkel 43’s apple cake does NOT contain almonds or nuts! My son is allergic to nuts and he’s eaten Winkel’s apple cake without any problem. Their crust does not contain nuts either. It’s made in the style of a Hong Kong pineapple bun crust ie very buttery and crispy. The Winkel’s bottom crust and top crust are not the same ingredients.

I am sorry this did not live up to your expectations 😓. Indeed they probably do not use nuts. Having said that, I am merely sharing recipes that people can make at home and this one unavoidably blends my experience of Winkel 43 with my own cooking style.

@@rominatalebi6738 For the top crust, use a recipe for the HK style pineapple bun crust. It's all over KZbin. For the rest of the cake, omit the nuts.
