Filipinos like sweetened fillings. I use condensed milk instead of sugar because it is creamer. Sugar can make the filling watery. You can omit.

Isn’t it better to cut the sides of the bread before filling them, so you don’t waste the fillings on top of the bread?

In my personal experience, it is better to fill the bread before cutting the ends so you can get uniform even edges. Whatever filling wasted is so little since I also do not spread it to the ends since I know I will be cutting them out. In my kitchen, nothing is really wasted because my dishwasher enjoys them all. Yes you can. If you have a good refrigerator, you can keep the filling for 4-5 days.

The earthquake was in the Northern part of the Philippines in another island. I live in Cebu which is an island in central Philippines. We were not affected. Thank you for your concern.
