Chef Jason teaches Kezzianne how to make a classic Trinbagonian street food, Pholourie:
INGREDIENTS
2½ Cups Flour
¼ Cup Chief Brand Ground Split Peas
2 Tsp Salt
¼ Tsp Geera (Cumin) Powder
2 Tsp Turmeric Powder
2 Tsp Yeast
1½ Tsp Baking Powder
1¾ - 2 Cups Warm Water
1 Tsp Minced Garlic
2 Tsp Minced Chadon Beni (Culantro)
3 Cups of Vegetable or Coconut Oil for Frying
METHOD
1. Place flour and split powder into a medium mixing bowl.
2. Add the salt, geera and turmeric powders as well as yeast and baking powder.
3. Mix well using your hands to evenly distribute the spices and ingredients amidst the flour.
4. Slowly add the water to the mixture and using your fingers; mix into a batter.
5. Add the minced garlic and chadon beni and bring consistency similar to that of a thick pancake batter. You may not need all the water.
6. Cover the bowl with plastic wrap and let sit 1¼ hours or until tripled in volume.
7. Pour the oil into a medium high sided saucepan over medium heat.
8. Remove plastic wrap from the bowl and stir the mixture to deflate the air.
9. Once the oil reaches 325 degrees Fahrenheit, pick up a tablespoon of batter and carefully place it into the hot oil to fry. If batter sticks to the spoon, simply dislodge it with another spoon.
10. Place a few tablespoons of batter into the oil to fry and using a perforated spoon, move the pholourie around in the pot to ensure it doesn’t stick to the pan or each other. Allow to fry for about 2 minutes on low to medium heat.
11. Remove pholourie from hot oil and place on paper towels to drain excess oil off. Each pholourie should be slightly crisp on the exterior, but be airy and light in texture on the inside.
12. Serve pholourie on a platter with a side bowl of tamarind chutney as the perfect dipping sauce to accompany.

I haven’t had Pholourie in years, so I decided to try this recipe and…. OH MY GOODNESS!!!! It turned out beautiful. The “onlyest” ting I was missing was the greasy oil soaked little brown paper bag. 💕🇹🇹

I usually make it the exact same way but with coconut flour and a little honey for the yeast to feed off of. The taste is amazing! 😋😋 Great job, Jason and Kizzie! 👍🏽

Great recipe. Pholourie is a Bengali recipe that was brought over to Trinidad by the labourers. Comes from the Bangla word Fulouri :)

I didn't know that, its great to know the history of food. A lot of the time bangla dishes are thrown in with Indian food and no one knows bangla cuisine.

Pholurie is also cooked in Bihar state of India and it is very popular. As per my knowledge most of the Trinidadians of Indian descent are of Bhojpuri speaking Bihari origin. But I admit your Trinidadian polourie is much tastier than Bihari pholourie ( I cooked it in Trinidadian way), and it has developed its own identity , as Trinidadians themselves.

Great video as usual guys. I'm here in England and loving learning Trinibago cooking. I need to make Green seasoning but Shado beni hard to get here in the UK. I'm going to try and grow my own Culantro. Sorry to correct you, but Jamaican Fritters are called stamp and go. Festival are Jamaican fried dumplings :)

know cilantro can be used as a substitute when you can't get chadon/culantro but I've never heard of using dill 🤔 then again I never had fresh dill. Will need to keep this in mind!
