INGREDIENTS :
For the Lemon curd, this is the recipe that I used here in this video • Bûche Roulée Façon Tar...
For the sponge cake:
- 5 eggs
- 120 g of sugar
- 90 g of flour
- 1 tbsp of vanilla
- 1 pinch of salt
For the raspberry curd:
- 250 raspberries (fresh or frozen)
- 13 g of cornstarch
- 3 tablespoons of lemon juice
- 40 g of sugar
- 20 g of butter
For the lemon diplomat cream:
- 300 g of whole cream 30% fat
- 400 g of mascarpone
- 4 large spoons of icing sugar
- 1 sachet of vanilla sugar (optional)
- 150 g of lemon curd (or replace with pastry cream)
Syrup to soak the sponge cake:
- 40 g of sugar
- 70 g of water
- 1 spoon of raspberry coulis (optional)

Bonjour, oui c’est ça possible de remplacer le lemon curd par la crème pâtissière (recette 👇) Ingrédients: 250 ml de lait, 3 jaunes d'œufs, 60 g de sucre, 25 g de Maïzena (fécule de maïs), vanille et 20 g de beurre. - Porter le lait à ébullition. -Blanchir les jaunes avec le sucre, puis ajoutez la maïzena et mélanger. - Versez le lait sur le mélange d’œuf sans cessé de fouetter, puis remettre le tout dans la casserole et mettre sur le feu et remuer jusqu’à l’épaississement. - Retirez du feu, ajoutez le beurre et mélangez - Versez dans un récipient, filmez au contact et laissez complètement refroidir.
