There are people who's only job is to remove those bones on an assembly line. Nearly every very salmon filet you see in the supermarket has had this done.

So, I’m watching this because our meat department in a local grocery store doesn’t deal much with cutting fish, and so I never got much in the way of training before I had to have some idea how to deal with it. There are some neat tips in this video which are descriptive in their visual, and it’s likely to come in quite useful. Thanks for this.

Nice work chef. I've been fishing for 20 years offshore. I have used a heap of filleting knives. Recently purchased the Shun premier chef knife, small chef knife and pairing knife for the kitchen. Really happy with the Japanese steel at 15 degrees edge. Razor sharp and holds it's edge for a long time. Question is, what do you think of the Debra knives for filleting? I mainly fillet the following fish (in case you're not familiar with them). Red emperor, red throat emperor, coral trout and Spanish mackerel. Any advice would be awesome. Thanks for the vids!
