As a sushi chef myself I can definitely say this is the cleanest I've ever seen but not the quickest Also, that fish's belly meat is no good 😅

Greetings Hiroyuki. I have been searching a very long time for a video on salmon filleting with near zero meat waste. With your video, I've finally found my solution. I was wondering if you could please answer two questions: 1: What is the make and model number of the knife that you use in the video to fillet the salmon? 2: What technique do you use to sharpen the knife? In watching your video, I can tell that the knife is razor sharp, and a razor sharp knife is the key to filleting salmon cleanly and without ripping the meat. Thanks again for your great video. It’s an intestinal way to do it! The salmon for me have one problem and it’s the bones that have in the middle that they are really weak and you can cut it easy but loose the way that you have for not leave meat on the bones! 🦇
