Chicken Noodle Soup
1 tablespoon olive oil
2 cups diced carrots
2 cups diced celery
2 cups diced zucchini (optional)
¾ teaspoon garlic paste (or 2 finely chopped garlic cloves)
2 Bay leaves
½ teaspoon cumin
6-8 cups good quality chicken broth
1 cup dry noodles
4 bone-in skinless chicken thighs or 2 chicken breast (or shredded rotisserie chicken)
1 nob of ginger (2-inch piece)
Juice of 1 lime
Salt and pepper to taste
¼ cup chopped parsley
