two things that improve the taste. one, buy dried chickpeas and soak them overnight yourself with a pinch of salt. two, when thinning out your hummus don't use regular water, use the excess water from the chickpeas.

+Christopher Lepre + after soaking overnight, cook in boiled water for 4 hours. if you want it smoother, try fishing out the coats(?) of the peas (not sure if thats the term, sorry). each hummus place has its own secret ingredient which is added and cooked with the chickpeas. try onion/garlic/tomato/etc.. when the peas are easily molded with your fingers, keep the water aside, and put it all in a food processor. add tahini and the water your kept, to get your desired texture. also, keep some of the cooked chickpeas aside and add them at the top of your hummus plate.

Hi, I'm from Middle East and you did the exactly the traditional recipe for hummus. But we don't add the cumin powder with it and we add the plain yogurt instead of water and we will add in the top some Sumac powder. We have hummus as a aside with grilled chicken, meat , fish and shrimp and we add it to the sandwich. Thank you for sharing this yummy recipe.

I just made this and the hummus came out delicious! I roasted some squash, red bell peppers and mushrooms and toasted some bread, spread some hummus and voilá, amazing sandwich, simple but delicious!

I've been using this recipe since it appeared online. It is delicious. My family never commented on it they just ate every bite and then used fingers to wipe the bowl clean. My son is having a Father's Day get together and asked that I make this Hummus! I commented that I wasn't sure he liked it and his retort was " Are you serious? It is ridiculously delicious".

This is THE BEST hummus recipe ever. When you watch some tv shows make hummus, even some top Chefs, they always add a TON of oil and salt. Doesn't matter how good your evoo is, if you add too much it's just nasty. I used organic canned and rinse them off well. When I follow the directions here I always end up with a wonderful creamy hummus. Thanks!

This was one of the best things I ever made. I didn't have tahini but I had bulk sesame. Ground it in Nutribullet, added olive oil, and made my own tahini! Then followed your recipe and improvised a bit and added sumac and turmeric. Served it with pita chips that I made as well. Wow! I got my new favorite snack.

Made this today for my father and two brothers. We are Lebanese and usually my mom makes us her authentic Lebanese hummus, she's out of town so I thought I would give this recipe a shot...All three men and I LOVED it! My dad said it was better than the one my mom makes! Definitely keeping this recipe in my arsenal. ;) Thank you for sharing!

a little tip, try to use dry chickpeas and not canned. put it in water for 12 hours and then cook it with vegetable broth until it completely tender (about 3 hours). I know that's a lot of time but the taste is totally different. using canned chickpeas still gives it a little store bought hummus taste.

Great! The only think I would change is the chickpeas. Instead of a can, I would rather buy some dry chickpeas and boil them myself. It takes longer, but it's simple and tastes better.

I'm new to health food. I rally love this recipe. After using this a couple of times I decided to try and add a few items. I added 1 tbs each of Turmeric and Sumac and 1 extra tbs of olive oil and water. I think it came out great. Thanks for this intuitive video

This hummus is incredible!! I finished making it just now and WOOOOW!! Should've done this six months ago when I found your recipe!! Is there much difference between using minced garlic/mincing yourself and also lemon concentrate/fresh lemons? I know the ratio is particular but I'm wondering about flavor-wise?

Hi there, thanks for your comment :) While I think you could get away with previously minced garlic, using fresh lemon juice is pretty important. The bottled concentrate just doesn't taste the same. We are so happy you found us and our recipe.

Hi there, Good question. We actually have never needed to freeze hummus (we eat it so quickly). However, hummus should freeze well. Place it into smaller plastic bags or containers. After defrosting, it might separate a bit so you'll want to stir vigorously until it comes back together. Hope that helps!

What I do is a cook a whole bag of garbanzo beans, put them into food processor with some tahini, garlic, salt and pepper, cumin and lemon juice. That obviously gives me lots of hummus, I keep it in one container. Every day I put some into a smaller container and add whatever spices I really crave that day. Maybe extra cumin, very fresh lemon juice, if I feel like heat I add red pepper flakes. Maybe some sumac on top, maybe zaatar if I feel like going Israeli. Just mix it again with a fork or a spoon and it is ready. If you have the base ready you can have hummus at any time and adjust it to exactly what you want to have that day.

Looks pretty good. I put about 3 small cloves of garlic in and a TBSP of store-bought, chopped garlic. Plus, I just put everything in together at once and blend it in a food processor, rather than go through all the steps you go through. Comes out just as smooth.

Made this Again tonight and I love this recipe and how to. It does make a difference blitzing the tahini and lemon juice first. It's easy to adapt to personal taste and a great base to add more ingredients for different dips. I added hemp hearts once and that was yummy. This time I added a teaspoon of lime juice and it tasted awesome. X

One of the best things about making hummus is that you can adjust the ingredients to your taste. Some of us prefer more garlic (Yo!) and black papper instead of cumin. I must thank you for showing me something that was very obvious but I didn't get: adding additional liquid, especially when you have to use a blender 'cause you don't have a food processor. I tried making hummus several times, and it never came out without hideous lumps because I wasn't adding more liquid. I prefer to reserve the liquid from the can and add that as the extra liquid. Then I use less salt because of the salt in the canning liquid. Thanks again.

Thanks guys! Pretty good hummus! I just discovered that MIT actually has a class in making hummus. Talk about some wild recipes... I've been making mine with grapefruit juice (because I ran out of lemons one day!) and instead of tahini, which is ground sesame seeds, I use whole flax seeds ground into paste in a vitamix. If someone's coming over who hogs all my hummus, I add 3 or 4 cloves of garlic and a fresh jalapeño. Presto! More for me! What I really appreciated is your great camera work. I can see you are having fun. Thanks again, and keep it up!

when you used water to thin it out, I used organic apple juice. that tiny bit of sweetness really brought out the flavors. thanks! and sometimes instead of tahini made from sesame seeds I used roasted lightly salted pumpkin seeds. I like a few flecks of cranberry sometimes instead of garlic flavor.

Best Hummus recipe anywhere online yet! Great job guys!! The pain of de-skinning the dried chickpeas is well worth it. I guess the trick may be to handle the chickpeas in small batches if using the baking soda method.

Your recipes is spot on except for two things. Most all middle eastern countries never add olive oil or cumin in the making only to garnish. I know that's über picky, but I thought I'd share it with you. Great video!

If you get the tahini in a can, put it upside down for awhile first. If you don't, it'll be really hard to stir, thus hard to measure, and you'll end up putting in too much like I did. It tasted like I took a big bite of sesame candy! :)

I like your method - mine is never quite as smooth as I would like. Will try this next time! Have you every tried adding sambul to your hummus? Its a red pepper paste that really gives it that extra kick!

I make mine without the tahini. You can sub with about a 1/4 c of olive oil.

Libby Reed Made it today. It turned out pretty good. Used a little bit more garlic and olive oil, and it's better on potato chips than on corn chips, but it's good on those too.

homemade hummus doesn't require outside tahini, otherwise is not homemade anymore. When you make the Tahini at home, you get a different taste of Humus :) My mum used to make hummus all the time but she never bought tahini or other ingredient from outside. All from scratch.

I totally agree. Hummus is much better without the tahini and with a lot more extra virgin olive oil. I also used to use lemon juice but now I prefer it with vinegar. Also there is not enough garlic. I use a whole big, fat clove of garlic. Delicious!

Just modified this recipe with oven roasted butternut squash just added to the recipe at the end and it is beautiful. I added one additional tablespoon of lemon juice to balance the sweetness from the squash. Another mod of my all time favorite hummus recipe...

Mine comes out that smooth and I don’t scrape 4 times. Soak the beans is better and most don’t add cumin.
