Oh yes, my husband will definitely be trying this. He is an American who thinks he`s West Indian because he married a caribbean girl lol. We have bought the store brand and he loves it. It will be exciting for him to make his own. He will have a big ole grin on his face that says "look what I did" when he is done.

I am glad you told us not to put it in the oven to dry it out because that is what I would have done (always ready for a shortcut). But you make it seem so easy. This video is beautifully done! My parents are from Fiji Islands but I was born in the U.K. and sometimes we don’t always have access to green mangoes but a lovely alternative is Granny Smith cooking apples (quite sour)and that turns out well too! Xxx lots of love xx

the oil help keep this for a longer period of time. Additionally, the oil can then be used to drizzled onto food with the same flavors and heat as the actual kuchela.

Thank you for this wonderful recipe. Some of my T&T friends add scorpion pepper. Also, they do not peel the mangoes. They wash the fruits and grate them.

thanks so much for sharing this video, I have so long been on the search for this recipe, and the tip I really needed, is precisely, that as you said, you'd have to squeeze out until dry(or rid of liquid, BEFORE PUTTING OUT IN THE SUN) BUT I prefer not grating or shredding, but slicing it very thin,thanks again

I think it needed more garlic. I don't cook the pepper but good technique. I usually leave the skin on but I will try peeling the mango brxt time. I also use mustard oil. Good video.

Elijah Jaramillo 4 tablespoons whole coriander seeds 1 tablespoon whole cumin seeds 2 teaspoons whole black peppercorns 1 teaspoon whole fennel seeds 1 teaspoon whole brown mustard seeds 1 teaspoon whole fenugreek seeds Put all the spices in a small, frying pan and set over medium heat. Stir and roast for 1 to 2 minutes, or until the spices turn a shade darker. Remove from the pan, allow to cool, and then grind as a finely as possible in a clean coffee or spice grinder or majic bullet ! and that is your Anchar Marsala ! Enjoy and let me know how it came out ! and have a good day :}:}

caribbeanpot I personally don’t use mustard oil, it’s too strong for me.My mom used it until she ended up in the hospital so it’s definitely no for me. Vegetable oil works just as well. However I use the skin and add chadon beni to mine.

hey i made this and it turned out absolutely delicious. however, the oil measurement was tooo much. i used 1/2 cup oil and it was too oily still. actually, i saw on a site a similar recipe to this but 6 mangoes were recommended. so next time, i'll either use more mangoes or less oil. the rest of stuff were spot on, with the amchar masala to taste of course. thanks again for the method.
