I make a big batch and freeze them on a cookie sheet. Package them with wax paper in-between. Cook on the BBQ or in a cast-iron pan while still frozen. Always tender and juicy, never fall apart.

Meat will inevitably shrink during cooking. The key is to go slightly larger than the size you actually want them to be so that they shrink down to the right size.

Salt and pepper on the outside just before grilling. Salt on the inside dries it out, while salt on the outside just before grilling creates a bark and seals in moisture. Don’t mix in spices with the ground beef. No proper burger restaurants that I know of do that

I know its not common but sometimes I add curry mix or chinese five spice. Other times just powder onion and garlic, it does make it tastier!!!

put the patés in the fridge for least an hour the meat will bind in the cold

I freeze them in big batches and cook as needed. Also, very lean beef will crumble. Never go leaner than 80/20.

Add Binding elements (Eggs, Bread Crumbs) Flour on the outside to lock in moisture Use a patty press to make the patties more compact Chill the patties in the fridge.
