I can't believe that after 20 years, I have finally found out the name of the paste. When I was 14, I was invited to have dinner with a Lebanese friend and his parents. They served Muhammara along with arabien bread and vegetables, among other things. I always wondered what the dip was called. Finally, I know it now.

An excellent recipe. Your recipe is the most comprehensive I've seen. I like the additional ingredients as one can take them out or leave them in for a more regional flavor. It looks stunning in both color, taste, and flavor profiles. By the way, you can freeze this dip if you make too much. I would probably serve it with some Zatar, Sumac, and fresh Parsley. I appreciate not having music for the most part of the video. I would strongly urge you to remove all music from intro and end too. There is a Zen quality about no music, very soothing, and relaxing especially for the ears. When you are a viewer, the ears start to become very sensitive to music after a few videos. Note: In the printed text recipe, you have a typo mistake in 'remaining seeds'.

Muhammara is one of the dishes of Syrian appetizers and originated in the era of the Umayyad dynasty and is registered in UNESCO as a special heritage in Syria The word Muhammara comes from the red pepper paste that is called in Arabic (muhamar) (ahmar) and a few days ago it was chosen to be the best vegetarian dish

For sure it dates the Omayad periode, 4 centuries before Columbus. They already had the red pepper, tomato, chilli past that several centuries later, the ignorant Spanish brought them from the new continent to Europe.

Excellent as usual Mr. Hungry Man. In Greece we do something similar, however, without the tomato paste, cumin and molasses. It has a vibrant vermilion color. Also in Serbia they eat something similar called Avjar. Cheers🙋♂

Your dishes remind me of my grandmother 👵 who was an excellent cook like my mother. Just a little note if you allow, I find you're very keen on garlic. The muhhammara we're used to didn't have garlic....optional.

Haha can't find pomegranate molasses in Netherlands? Lot's of Turkish stores. In Turkey Nar (Pomegranate) Ekşisi (vinegar) but in this case it is sweet and sour. So try and ask for Nar Ekşisi! Real Turkish molasses (pekmez) will be very sweet. Also I would then not add lemon until you taste. I would also cook the tomato paste a bit with some olive oil. Turks also may use hot pepper paste (acı biber salça or not spicy just biber salça).

The recipe I’ve made by Ottolenghi omits tomato paste and pepper paste. I think it comes out less dense than your version by the look of it. Would be interesting to see how they taste in comparison. Thx for sharing your video.

It's paprika peppers, you can also use red bell peppers, but the best pepper is mildly hot Aleppo peppers if you cand it.
