well few month ago i was in ireland and visited some some stills and the irish whisky museum and they said that the original whisky for irish coffee was powers. and the important thing for irish coffe is that the whisky used is pretty oily because than the cream tops better.

Buena Vista uses white cane sugar (2 bits) and 4.5cl whisky and they say you shouldn't use molasses based sugar like demerara. Maybe demerara doesn't change the viscosity of the drink enough, I don't know.

Hey Steve, I've been watching your videos for years and using your recipes for friends. If possible, could you do a prebatch video? I know the negroni is a classic go to but aperol and campari taste bitter to me (similar to how cilantro tastes like soap to me) and I don't see a lot of great sources on prebatching.

I've been getting in to making better coffee for a few weeks now. So I could be wrong. But blooming coffee in a french press seems unnecessary, right?

As for the sugar, I would never use "white" sugar as such, always either demerara or at least in Finland *everyone* (me included) like to opt for brown sugar (white sugar with added molasses); gives it a way richer flavor/texture profile. Also 40ml whiskey ;) Funny how Irish Coffee is probably 99% known to everyone who's ever had a drink, but still you get 99% different version whereever you go :D

It was in Shannon Airport, where at that time all Trans-Atlantic flights stopped to refuel. It's also where the concept of Airport Duty-Free was invented. Baileys and similar Irish Cream liqueurs are derived from it, but interestingly they don't actually use Whiskey. I believe that's because White Spirit/Vodka gives more stability and a longer shelf life. Anyway. a very nice video about a real classic. Unfortunately, I don't think Joe Sheridan was really rewarded.
