Lemon Curd (or Lemon Butter) is an old-fashioned citrus preserve. Fresh lemon juice and butter are combined with eggs and sugar to create a deliciously smooth, creamy and rich Lemon Conserve. Use Lemon Curd to fill a Lemon Meringue Pie, a filling for a cake, as a spread for sandwiches or toast or as a topping for ice cream. Try it today - you'll love it!

RECIPE FACT SHEET
=================
INGREDIENTS IN THIS DISH:
1/2 Cup of Lemon Juice
3/4 Cup of Caster Sugar (Fine White Sugar)
200g Butter (Unsalted)
3 Eggs (at Room Temperature)
MAKES 2 CUPS OF LEMON CURD
Preparation Time: 2 minutes
Cooking Time: 15 minutes
STORAGE:
Keep in an airtight container or sterilized jar. Store in the fridge, unopened, for up to 6 months - once opened, consume within 1 week.
TO MAKE MICROWAVE VERSION:
Place all ingredients in a microwave-safe bowl or jug. Cook on HIGH for about 6 minutes (depends on microwave) - stopping every minute to whisk mixture. Once mixture is smooth and thickened, place bowl in sink of cold water (as seen in video) and whisk until cool.
ALL MEASUREMENTS GIVEN ARE AUSTRALIAN STANDARD METRIC

@orangedac Believe it or not, what you see in my videos is only a window into my diet. I don't eat this kind of stuff all the time - and most of what I cook for KZbin gets gobbled up by my friends and family ;) But thanks for your concern...

@creamcandy25 You might be able to make Orange Curd or Lime Curd - but this is really a citrus-based recipe. It won't really work with other types of fruit ;)

I just made this! I had to figure out the butter measurements because I'm in America, but that was easy enough. We can buy lemon curd around here, and it's very good, but I thought I'd give this a try to compare the two. The homemade stuff is definitely better! Thank you for posting this!

@Pvjungco No, do not use a metal bowl for this, as the lemon juice can react with metal bowls.

Such a lovely recipe! And the fact that you only have to cook it for ten-fiftheen minutes is amazing! I tried another recipe once and it literally took an hour for the mass to cook down to the right consistency!

@SaiE8 No it was 3 whole eggs (lightly beaten) - the yolks are usually fairly orange - maybe Australian chickens eat lots of carrots or something LOL

I really appreciate you adding I can use the bottled lemon juice. So many tutorial/recipes want fresh lemons and never mention bottled lemon juice. Thanks for the video!

@pointeskatecybunny Use whole egg. This recipe makes about 2 cups of Lemon Curd. There is no need to cook it longer, as the curd will thick on cooling. Just follow the instructions ;)

@digit432 You need to keep stirring - the butter will float to the top, and then melt. That's why you must keep stirring. Did you do the stovetop or microwave version?

i remember making this at school years ago lol.. and i forgot all about it and how to make it but thanks to you i remember.. so last night not long after you posted this vid i had to try and and it was really nice but i added it into old jam jars i had left.. well anyway thank you so much for this vid its nice to do home made stuff its cheaper and at lest we know whats being adding into it... @Farlachan You need to use citrus fruit for this recipe to work. The acid in the juice makes the whole this work. So it's lemons, limes or maybe oranges - but Lemon works best :)

I like to use a bain marie (pot in pot with water in it) for my lemon curd, there by avoiding the whole scary glass bowl thing. Fantastic idea with the cold water and I must try the microwave idea when I have my next impromptu tea party. Lovely!

@simpsiano123 In a way, yes. when something curdles it means that you've let the mixture heat up too much and the mixture gets clumpy and starts to get really thick, it starts to turn into a solid rather than staying in liquid form...

The one thing missing is the zest of one lemon. Makes all the difference to that zingy taste. Also use a metal container to avoid damage to the glass.
