Ingredients
2-3 Tbsp olive oil
1 cup diced onions
1 cup diced carrots
1 cup diced celery
1 Tbsp tomato paste
1 tsp garlic paste
1 cup dry lentils
4 cups Beef broth
2 Bay leaves
1 tsp ground cumin
Salt and pepper to taste
Fresh parsley to garnish
Procedure
Sauté onions, carrots and celery with olive oil for few minutes. Add tomato paste. Add garlic paste, sauté for few minutes. Add lentils, salt, pepper, cumin, broth and bay leaves. Bring the soup to simmer on a medium heat for about 20 minutes or until lentils and vegetables are cooked through. Adjust any seasonings if necessary. Garnish the soup with chopped parsley and some crusty bread.
