Gail just wanted to let you know I made your lemon pie for my paint class ladies this past Saturday. I had 14 ladies as I give lessons in my home. Ive had two classes a month for several months now. But anyway I had four different desserts,,but the lemon pie dissapeared first and I just barely got one bite of it. I bought more lemons today to make another for me and my sister this coming weekend as we are both keto low carb,sugar free. I was worried because it was so thin when I poured it into the pie shell that night. But it did turn out beautiful the next day and the one bite I was giving by another was heavenly. Gayle: I made the pie for my husband and he gave it a thumbs up! It was a little strong so I think I will cut back on the lemon zest. For people who like a stronger lemon pie, it is perfect. Even the pie crust was great! Thank you soooo much! Keep up the good work!

Omg I nade this recipe. I used a bottle of lemon juice and lemon extract instead of zest since I didn't have fresh lemon. It is so amazing! I love it! This was always a dream to make a lemon meringue pie. Thanks for the amazing recipe.

Hi Gayle. I’ve just made this pie and I love it!!!.. the lemon filling was a little tort for me so next time I’ll use less, but because I like a more crispy meringue I baked it separately and used monk sugar granulated which gave me a much more crispy texture. I then simply placed it on top of the pie. It works beautifully and I was very pleased with it. Thank you for this wonderful recipe. 😋

Love lemon meringue, going to give this a try.with my headphones on I can hear the rain comming down in the background we are very dry here for 2 weeks...very relaxing.
