I just made this recipe today. My dough was VERY wet and sticky, probably because it's been so humid here lately. I suggest chilling the meatballs before attempting to cover them with dough. It really firms them up and makes the task easier.

I'm Kurdish, and we have a surprisingly similar dish called şamborek - slightly different filling and spices of course, but essentially the same. One of my favourite foods, so I'm sure I'll love these just as much!

Is there any stage of this process where the mixture can be prepared and frozen…then defrosted on the day you want to cook them? Or maybe they can be part-cooked and then frozen? Just wondering…I have a party coming up and I would like to prepare these well ahead of time, if possible. I would appreciate someone who has tried this, letting me know of their success/failures. yes, you can freeze those, I always freeze mine. You can either roll them flat and freeze or cook them and freeze afterwards. Both work.

Thank you for your recipes, I learn a lot with your comprehensive explanations. May I ask, sometimes when the dough is rolled out, you use flour, and in this case you use oil. Can both be used in any case? Or is it because it was relaxed overnight? Thanks again, I'm an amateur, but I have learned a lot with you, especially about doughs and cakes, my favourites. because the dough will be relaxed overnight, if you use flour, it wet dough will adsorb the flour and become sticky, if you use oil ,in the next day the dough is not sticky and also oil can prevent water evaporate, so the dough still soft and not dry in the next day.
