Hello champions these collard greens are super easy and delicious. They do not require a lot of fuss to make. Hope you enjoy the video.
Ingredients
2 or 3lb Greens
1 or 2 tsp Hot Sauce
2 tsp Vinegar
1 tsp Bouillon Cube
2 tsp Onion Powder
2 tsp Garlic Powder
2 Hamhocks

Do you know that you’re the first person that came to my channel that knows about old school cooking nobody believes that you could just put water in your greens and get the best broth ever.!! I was taught how to cook by my grandmother, but sometimes I don’t like to do her recipes because the bigger KZbinrs take my recipes and go viral and I get very little views but I know that I’m going to be able to show all my subscribers how to put love in food very soon thank you again. Thank you!! I always pick my greens. I grew up with salt pork or ham hocks but later I learned to use bacon ends, chicken broth, a pinch of baking soda (makes the greens so tender!)

Yes I know people who use chicken broth but your right about baking soda although winter collard's don't need it they're so much better than the summer one's.

My first introduction to real " Soul " food was while serving in the Military and stationed in Gulf Port Mississippi. On my off duty time I would often go into town to basically relax. During my time in Mississippi I made friends with a Black Family who's Father was a Barber on our base. I was invited to have dinner with them and I've never tasted better 👍❤ I'm 77 and obviously retired these days but I'll never forget the kindness and generosity that family showed to me.

They look so delish! Can't wait to try your method. I have made them many times but always looking for a different way. I'd like to see your method of washing. Hopefully you have an easier way than mine. It's back breaking. My mom put salt in the water when washing. She said the bugs, ( if any) would slide off along with any sand. How do you do it? Thanks!

Kick it up a notch and replace the hammocks with country ham!! Cut the country ham into silver dollar size pieces and fry it in some bacon grease. Then put that in the greens. Deglaze bottom of skillet where you fried country hams with a little water then pour that flavor into the greens too.

You fry them to concentrate the flavour of the greens until they wilt down and watch you don’t use too much water. It’s a balance of whether you want a lot of pot liquor or to have more flavourful greens.

Don’t the ham hocks need to be tender falling off the bone almost before u add the greens cause the greens will be done and the ham hock won’t be done? Just asking. I cook my ham hocks tender before adding greens.

I was taught to score t(cut into)he ham Hocks before cooking helps release season faster

I always cook them first until tender and the fat is rendered, remove from the broth set aside to cool then remove all the meat and add back to the broth and greens.

My mother used salt pork to season her collards. She fried the grease out of them and used that! After cooking they were chopped up with a fork & knife. The best! I miss you mama

I thoroughly wash my hammocks and pressure cook them about 50 minutes (saves time), and add them with its liquid to my seasoned greens. Some greens take longer to tenderize than others so cooking time varies.

I made these collard green yesterday(06/24/2024)I went directly by your instructions, as I put them a pan with bacon grease and watching the cook down the light came on, my Mom used to par boil in water with baking soda to tenderize them I had forgotten all about that, but I like your way of frying them down , was very good. Collards are my favorite. My mom use to fry them and they were so GOOD. I also noticed they would have a sweet taste after the 1st frost would fall on them. (My mom grew a big garden) Thank you for sharing 🙏🏿

My Momma and Grandma made Collards with ham hocks too and so do I. I've never fried them though and don't think Momma did either. I do love fresh cooked collards.

It's funny that you use vinegar. My grandparents and my mother put vinegar straight on the greens or something called chow chow. Yummy

I use Chicken broth instead of water,I fry 4 slices of bacon crispy,pour in my Hamhocks pot with greens,onions, bellpeppers, Lawrys season salt garlic, & okra cut up, cook until done.

Collard Greens are my absolute favorite green. Nothing beats them. I’ve got some growing in my garden, and I’m planning to cook them for Christmas dinner, so I’m watching your video looking for tips. Ham hocks are not easy to find anymore. If I see them in the store, I grab a few and freeze them.

Looks delicious! I love collards! I even like the stems! I remove them, then cut them up small and throw them into the likker early!

Just came across your channel! My grandma and mom cook the best greens. I never seem greens cook this way. It looks so so good! Everything you're doing makes a lot of sense. I would have loved sitting at the table with your grandma and family eating some of her greens and cornbread. I haven't cook greens in a long time. When my late husband was living he was on a salt free diet. I know not very tasty at all. He was on it so long before he passed I've adapted to his diet. Even today I barely and salt to my diet. I don't care to eat out much because most prepare foods are extremely salty to me. I don't do much cooking at all anymore. I will be cooking those greens in a small amount. Those are some VERY Clean & sparkling greens! That tells me I dont have to be scared & I can eat anything you cook😅 Some of these KZbinrs say you dont have to wash your chicken & cook it right out the package😮

😂😂😂 You must be From Georgia. My grandmother would beat you up. If you do not clean those greens properly. That’s the one thing she taught me how to clean Green I was born by teenage pregnancy, but my grandmother did not play about dirt dirty house, dirty clothes anything dirty 😂😂and I love her so much thank you for your awesome support and kind words. You gave me a good laugh at 4:30 AM in the morning🥰💯

My 90 y/o aunt taught me to soak my collards in soda bicarbonate for 1 hour rinse then cut and cook. This removes some of the bitterness.

You don't need a lot of water to cook the greens. I use a forth of a boiler and allow the water inside the greens to finish with the moisture needed to cook the greens quicker.

There is enough broth is you put some of the stalks in the greens, which holds most of the water.

Another thing I think about when cooking greens, is to learn to not necessarily use meat, because I would like to enjoy the natural taste of the greens, by using jalapeno pepper, vinegar, one or two chicken bullion cubes, two tablespoons of sugar to take the bitterness away from the greens, and butter. It magnifies the natural and wonderful taste of the greens themselves.
