Wow!! Thank you for your awesome support and kind words. Do you know that you’re the first person that came to my channel that knows about old school cooking nobody believes that you could just put water in your greens and get the best broth ever.!! I was taught how to cook by my grandmother, but sometimes I don’t like to do her recipes because the bigger KZbinrs take my recipes and go viral and I get very little views but I know that I’m going to be able to show all my subscribers how to put love in food very soon thank you again. My first introduction to real " Soul " food was while serving in the Military and stationed in Gulf Port Mississippi. On my off duty time I would often go into town to basically relax. During my time in Mississippi I made friends with a Black Family who's Father was a Barber on our base. I was invited to have dinner with them and I've never tasted better 👍❤ I'm 77 and obviously retired these days but I'll never forget the kindness and generosity that family showed to me.

I always cook them first until tender and the fat is rendered, remove from the broth set aside to cool then remove all the meat and add back to the broth and greens.

Kick it up a notch and replace the hammocks with country ham!! Cut the country ham into silver dollar size pieces and fry it in some bacon grease. Then put that in the greens. Deglaze bottom of skillet where you fried country hams with a little water then pour that flavor into the greens too.

You fry them to concentrate the flavour of the greens until they wilt down and watch you don’t use too much water. It’s a balance of whether you want a lot of pot liquor or to have more flavourful greens.

I thoroughly wash my hammocks and pressure cook them about 50 minutes (saves time), and add them with its liquid to my seasoned greens. Some greens take longer to tenderize than others so cooking time varies.

Collards are my favorite. My mom use to fry them and they were so GOOD. I also noticed they would have a sweet taste after the 1st frost would fall on them. (My mom grew a big garden) Thank you for sharing 🙏🏿

Just came across your channel! My grandma and mom cook the best greens. I never seem greens cook this way. It looks so so good! Everything you're doing makes a lot of sense. I would have loved sitting at the table with your grandma and family eating some of her greens and cornbread. I haven't cook greens in a long time. When my late husband was living he was on a salt free diet. I know not very tasty at all. He was on it so long before he passed I've adapted to his diet. Even today I barely and salt to my diet. I don't care to eat out much because most prepare foods are extremely salty to me. I don't do much cooking at all anymore. I will be cooking those greens in a small amount. I made these collard green yesterday(06/24/2024)I went directly by your instructions, as I put them a pan with bacon grease and watching the cook down the light came on, my Mom used to par boil in water with baking soda to tenderize them I had forgotten all about that, but I like your way of frying them down , was very good. You don't need a lot of water to cook the greens. I use a forth of a boiler and allow the water inside the greens to finish with the moisture needed to cook the greens quicker.

Another thing I think about when cooking greens, is to learn to not necessarily use meat, because I would like to enjoy the natural taste of the greens, by using jalapeno pepper, vinegar, one or two chicken bullion cubes, two tablespoons of sugar to take the bitterness away from the greens, and butter. It magnifies the natural and wonderful taste of the greens themselves.

we eat the stems with the greens.we puy the greens in a pressure cooker along with neck bones and some olive oil and a little suger and 30 minutes later they are ready to eat
