To counter the Wednesday night "what to cook for dinner" blues, my mother kept various recipe clippings and on Wednesdays always cooked something new that we had never eaten before. We kids always like helping to cook on this day, because it was when my mom tried out "weird" ingredients we had never seen before, or recipes from various international cuisines. (This was the 1950s...) Then, at the end of dinner, the whole family (there were 6 of us) would vote "keep or throw". If "keep," the recipe went into the monthly rotation. If "throw," my mother would ceremonially incinerate the recipe in the candles on the dinner table, while we all toasted (wine for my parents, juice for us kids) "bad (not "bon") appetit"! Usually, my youngest brother cast the deciding vote.

I'm Italian American and my husband is Korean, so fresh garlic is EXTREMELY important to us. The only time I think a "paste" is warranted is with South Asian cooking, like ginger/garlic paste sold at many Indian stores. I grew up in a town with a lot of Indian people and ate at friends' houses pretty often, and that is something their moms used all the time. So if I'm making some kind of Indian dish that calls for it, I'll happily use it without feeling like I'm insulting my ancestors.

I always, always do your method for 'softening' beef when I do any beef stir-fry. It's insane how melt in your mouth tender it is.

"I have a thing also ... " is an extremely Marion way to begin a sentence. Yes, you have a relaxed "we can do this!" vibe but you're also a fan of the "if you're going to do something you might as well do it properly" approach. It's a winning combination.

Mongolian beef is my all time favorite. Thank you! I'm watching from bed with an icy cold Coke in a glass bottle. They taste better than plastic. I'll have another with dinner. I can't wait. You always make me so hungry. Missing mamma Noi . I like to oven roast my garlic for days when I'm too busy to chop garlic. Nice flavor added to stuff, Fresh is best though. Did I miss the chillies? In America our Mongolian beef has heat to it.

Watching this Wednesday morning, over breakfast, from the U.S., just a bit north of Washington, D.C. Mongolian Beef with noodles is one of my Chinese restaurant favorites, so I'm very pleased that you selected it for this week's recipe. Thanks to your channel and tips like the cornstarch and baking soda marinade, my brother now says "why did we order takeout? yours tastes better and fresher than the restaurant." This goes for dumplings and bao buns as well. Thank you for saving me money and calories over takeout.
