Osso buco is a traditional veal dish that can be served for any occasion. In order to help the osso buco keep its shape while it cooks, have your butcher tie the cut of meat with kitchen string.

I watched it at 2 x speed and still didn't have the patience to watch to the end. That slow motion is so painful and pointless.

In the Italian recipe, there is onion but so much less. It's a matter of balance the good cuisine...

I've been cooking for 20 years. Head Chef for 8 and this is the most basic, blandest Osso bucco I've ever seen. Whoever created this recipe needs to get 🔥📛

A key to perfect Osso Buco is to cut onion very badly and very slowly. This was painfull to watch.

A great demonstration of how not to chop, sear, cook, and serve Osso Buco. Also, a great demonstration of how to drink 2 bottles of wine while waiting for results... lol

In lieu of the chicken stock, I prefer making my own stock with lamb bones that can be obtained from your butcher. I usually prepare the stock one day in advance, similar to making a Sauce Espagnole. This recipe didn’t illustrate the root mash that the lamb shanks were bedded on, but a 50/50 mixture of mashed celeriac root and Yukon gold potato with added mashed garlic cloves, salt, coarse ground pepper to taste is a nice complement to the richness of the sauce.

@@chuck571 Just ask the butcher at your local supermarket. They may have Beef, Veal or lamb bones that you can use to make your own stock. While I used to make Osso Buco with veal shank at first, I have more recently been using lamb which I personally find to be a more flavorful.

You need to watch a Gordon Ramsay vid to learn how to cut up an onion. This is painful to watch, and will be more painful when you cut yourself. Don't cut towards yourself!! PS The slow motion is absurd. Recipe looks good though! lol

Why do Americans have this fascination with wrapping things with butcher's twine even if there's literally no purpose or benefit to it? Is that single loop of string really going to effect how your osso bucco cooks? You know, that piece of round meat with absolutely nothing that needed tying down?

Cooked properly, the veal will fall apart and if you are serving it for guests, the presentation is better with the meat on the bone.

This must be the snooty French cooking school version of Oslo buco. Not a tomato in sight, and CARROTS???!,, celery???!! Prolly a very tasty dish but it’s not the Italian Osso Buco.

First of all. Italians don't have a monopoly on braised beef shank. Osso Buco isn't really an Italian dish, sure, it's well known in Lombardy, but they absolutely did not invent it. It's been around for millenia. Secondly, having lived in italy for 10 years, you're wrong, they absolutely use carrots and celery. Thirdly if you'd actually watched the video, you'd have notice that they did in fact use tomatoes.
