Phad thai: 4 whole wheat noodle nests and broken up 3 cloves of garlic, minced 1 thumb of ginger, minced 1 red chilli 100 g mushrooms (button/oyster/shiitake) 1 yellow pepper 1 red pepper handful of sugar snap peas 1 carrot, grated Dressing: 1/2 tin or 200ml full fat coconut milk 1 lime's juice 2 tbsp tamari 1 tbsp liquid sweetener (ex: maple syrup) Toppings/Ending: Handful of fresh coriander, ripped black and white sesame seeds Toasted cashews Pak Choi (throw in a head, chopped)

Method: 1. Boil water, once boiled add noodles. 3. In a pan add oil, garlic and ginger 4. Add chilli 5. Add mushrooms, capsicum 6. Fry off vegetables 7. Add peas and carrot 8. Add half dressing (for mushrooms to absorb and soak in) 9. Drain noodles 10. Add noddles and rest of dressing 11. Add topping: cashews, sesame seeds, coriander and Pak choy For dressing: coconut milk, half lime juice, tamari, maple syrup. Pretty sure i have all of that right.

A quintessential ingredient in the sauce of any Pad Thai is the juice of tamarind; you could buy Tamarind concentrate and add it directly, get a lump of tamarind paste and press a bit through with some water to make an infusion, or if you really need to, you could buy tamarind juice, though bear in mind that it's rather sweet; the former two have a more rich flavour with a hint of sour...you want next level? Be sure to use tamarind! :D You should be able to have some sort of liquid tamarind from any East or South Asian store, whilst the juice is sold by Goya at many larger regular grocery stores...at least in the US.

Hello from the mushroom capital in PA! Tried this with oyster mushrooms, scallions and spinach. Took me about 30 min and I overcooked the noodles, but it was delish! Love the 5 minute recipes, because, at the end o f the day, I'm exhausted. Keep making more of these, please!

This looks awesome. I'll use brown rice noodles, baby bok choy (cooked a bit more than here) and then date syrup as sweetener in the dressing. YUM! Just eating :) I used regular onion and coconut sugar instead of maple syrup, also I didn't have any asian noodles on hand so I used simple spagethi - becouse of that it took 15 minutes including water to boil and cleaning! awesome :D topped with chili sauce on top!

When you set your clothes on fire will you please do something about that burner. OR explain to us why it's so high and that your perfectly safe. A bad burn scares very badly and stays that way forever. Just worried about you two.

tracie sheppard haha chinese chefs love the high searing heat when they wok. It's gives the food that distinct flavor. It's scary to see the fire 3 feet in the air when the wok is lifted though.

Made this tonight. Thank you! So easy. Omni Pad thai was a fav, but it was so involved (and full of bad stuff). This was quick and the real deal. I sauteed diced green tomatoes in it. Also, sprinkled chopped walnuts on top. Mmmmmmm
