As someone who's actually gone and made protein bars like the ones you can buy - it really isn't worth the hassle. First, you basically can't do it without getting your hands on some IMO powder or syrup like Vitafiber, which is already stupidly expensive but necessary to get the texture right. Then it's a disgusting mess to handle the protein mass, form it into bars and get it covered in chocolate. Protein bars work because you can conveniently buy them, as a candy bar replacement or a quick fix to curb hunger between meals. For any other purpose you're better off just baking some high protein cheesecake cupcakes or some other protein pastry or just having a regular meal. It's more filling, cheaper and usually has better macros.

The recipe link above isn't working 😢. Found the recipe on the website and it says 28g of butter or coconut flour I believe it was meant to be coconut oil. Looks tasty and will try this weekend.
