@@LowballJim Indians too. I asked my mother for an approximation for making a certain Indian dish, and she said, 2 tbls of oil. I made it and the dish was ok, not great. She came to visit last year and it was at least a cup of oil. When I pointed this out, she pointed to the small ladle (from the counter that she calls table) and said, "2 tablespoons of oil".

no. first fry the tortilla. then dip the tortilla in the hot (temperature) sauce for a while (while its lit) before it gets too soggy. that way you did it is the hipster way. when you saw your mom did it yet you wherent paying yoo much attention or juat want to do everything in as few steps as possible.

Dude... my thoughts exactly... I use chop sticks 10x better then that and I'm white and only use then occasionally. I expected more in that area. Also I was expecting cheap ass food but he made no doubt restaurant quality if not maybe better. And melting the cheese isn't impossible just unlikely. It's like feta with enough heat at high enough temp it likes to melt a bit

As someone of Mexican decent I’m tripping balls watching how proper you make them enchiladas. I watched Silicon Valley a few years back and never thought I’d see the day you where making enchiladas the way my family has for years hahah . 🙌🏽🙌🏽🙌🏽🙌🏽 not one thing wrong with how you made those absolutely gangster AF . Pretty good Jimmy. Two things: 1. Always fry your sauce before using in any way. It changes flavor profile of chiles. 2. Queso fresco is not a good melting cheese. Good for enchiladas filling though, like you used it. Use a Oaxaca cheese for topping if you want it to melt. And yes, crumble the fresco with your hands, just like you figured it out.

Wow, a non-latino making enchiladas the almost) proper way. Ingredients on point, technique a little off. Fry both sides of the tortilla, then take it out of the pan and on a plate on the side. Continue to dip and fry the remaining tortilla, stacking them after. Fill and roll each one after you’re done. They should still be warm, but not so hot you can’t handle them. Also, we usually add chopped cheese to the onions (never use a grater) when we use cheese as the filling. That’s it! You can add the cheese on top (if chicken is the filling). We don’t usually add sauce. Instead we top with cheese, sliced tomatoes, onions and some people also add chopped lettuce. Serve with a pickled jalapeño and sour cream on the side. Red enchiladas aren’t put in the oven, and never use canned sauce! Someone gave you the OG recipe. 👏🏼

The technique of bathing the tortilla in enchilada sauce and then shallow frying it is a spot on Mexican technique. The oil heating the tortilla and sauce softens the tortilla and adds a level of caramelization and umami! Good job. I am a Mexican who grew up eating delicious food. The only thing we did not do is place them in an oven after they came off the pan or griddle... but if it helps keeping them warm, I get it.

I'm a mexican......and i have never been so proud. My abuela(grandmother) made the best enchiladas from scratch. She taught me all her recipes by memory and by teaching me when i would visit or spend the weekend with her. At age 11 i knew how to create all her dishes. Now that i'm 56, i taught my grandchildren as well. On a side note, i was dealing with the virus in March. It kicked my latina ass, and almost killed me. If not for those mexican recipes(caldo, and rice) and Vicks VapoRub my abuela swore cured everything, I doubt i would be writing this to you. Dang, went full traditional enchilada. I did the same thing though when it came to quarantine. Avoided all the standard supermarkets and went to my mexican markets instead.

All you young ladies out there; this kid with his cooking skills is totally good husband material! My ex would fire up the grill and throw a steak on (I had to keep an eye on it) and tell everyone he cooked dinner. Damn! If there'd been a Jimmy O. Yang in my part of the country back in the 70s, I'd have snatched him up in a heartbeat.

Well done Jimmy, looks really yummy.. Se ve delicioso ...el platillo(el que entendió entendió lol), maybe not all steps are like tradicional recipe but the end result looks good.. Also Jimmy if ur feeling adventureous you can add a little bit of Chile de árbol to the mix. (Is not like the recipe but I like spicy food, that's how I make it). I know u didn't ask for tips but may I suggest. Adding tomatoes to the mix then I know u used chicken broth but also u can use some Knor Suiza is chicken powder and let it seasoning. Then fry the tortilla by itself then dipp in the tortilla in the sauce then place the chicken. Inside also u can use queso panela or fresco use a fork to crumble the cheese and cut little slices of onion and mix it with the cheese if u like or separate. I would love to see you with Franco Escamilla in a comedy show. Also in more movies. Big Hi from México 🤗,

My abuelita would first dip the corn tortilla in the oil for a few seconds on each side, then she would dip it in the sauce, then put it in her casserole dish, stuff them with the chicken, tomato, onion and a spoon full of the broth it all cooked in, so that they were never dry and always so juicy and delicious. You go Jimmy, wit yo bad self!!!

As a Mexican, you didn’t totally get there. Recommend frying the tortillas first, then dipping them in the sauce before filling. That way the tortilla doesn’t come apart so quickly in the frying pan. For someone who isn’t Mexican tho, heads and shoulders above anyone else I’ve seen. 👍👍

Bro you made enchiladas even more authentic than many of the Mexican restaurants in USA , who either do it the extra lazy way to save time/money, or they gringo out the menu /ingredients for the local crowd. Legit AF rt here man. Im super impressed. If i wanted enchiladas closer to the way my mom makes them, id be better of coming to your house then my local “Taco Tuesday” hack of an eatery.
