Excited to try this recipe. BTW you can drain off the watery whey by straining the greek yogurt using some cheesecloth. Letting it drain in the refrigerator overnight leaves you with really thick and creamy yogurt.

Yes. After straining you should be left with a fairly clear liquid. If not, then the weave on the cheesecloth was not tight enough. I usually double layer the cheesecloth to make sure that I don’t lose any of the yogurt and only the whey gets through.

Quick tip: be sure the egg whites are at room temperature, otherwise will take a lot longer to whip up.

I haven't looked to see if you did another version of this, but watching this one it looks like maybe if you folded the combo instead of whipping the egg whites in again they might have risen higher - and the cream of tartar might have kept it there. Thanks for all you show us, and your humor!

Blondies are the original brownies, according to Fanny Farmer. At some point after she taught how to make brownies at her cooking school, chocolate became affordable, was added to brownies, and the original brownie became the blonde. Also, stir the whey back into the yogurt, or line a colander with a coffee filter and strain the yogurt overnight for yogurt cream cheese. Use the whey in your oatmeal, or baking.

I'm not sure xanthan gum would work. As far as I know, it's supposed to be a stabilizer. Baking powder might work, it's really just a mix of baking soda, cream of tartar and a starch.

I'm a bit confuse. The ingredients says 96g (1/2 a cup) of sweetener, but when I measure the sweetener, the half cup doesn't come close to weighing 96g. I'm new to this baking stuff. Am I missing something?

Are you using erythritol? Bc other sweeteners (like baking stevia) are less dense so 1/2 cup would be way less than 96g

Hmm. You could try subbing some chickpea flour, too. If come across some egg replacers that use it and it would help keep the protein up. Just for the love of god, if you try it, don't taste the raw batter. I'm serious. Chickpea flour is ground up raw beans and that's exactly what it tastes like. You make that mistake one time.

The so called water stuff is straight up protein. Don't throw it out, mix the protein back into the yogurt. If you open a yogurt and it doesn't have what you call "water" on the top then don't eat it. That means that some kind of thickener was added to it. I want 100% yogurt that doesn't have additives added to it.

I find your recipes taste very much like a diet food, but they make anabolic food look like normal food in other words...INSANE volume which I will occasionally take instead of the flavor
