OK, I'm totally going to try this in an Instant Pot pressure cooker. Love the assorted GunPla. 1:30 We usually say, "Don't crowd the pan, you will trap steam which will inhibit browning." Some recipes (notably Cook's Illustrated) will have the cook heat the oil until it's _just_ smoking so the cold meat won't drop the temperature of the pan too much. I tend to use rice wine (日本酒) for deglazing the pan.

@Ds-xz3hcАй бұрын
And many of these Japanese rice cookers (and I assume other countries) have longer white rice cycles than some common NA models, like 50 minutes instead of 30.
@RyeScotchАй бұрын
If you only using rice cooker and doesn't have the keep warm rice cooker, you can soak the pieces of meat in baking soda first for 20-30 minutes, then rinse the meat, dry with tissue. then just follow the cooking method here, without extra keep warm time. I'm sure you get the tender meat..
@KumofanАй бұрын
@@RyeScotch The extra cooking time on keep warm is presumably to cause collagen to break down into gelatin, which is what produces the tender texture of slow cooked meat. Baking soda (“velveting”) can help prevent proteins from binding together during searing but isn’t likely to result in a fall-apart or fork tender texture. For thin cuts of meat, the velveting method could help, but it isn’t likely to be necessary when slow cooking, and could introduce unwanted flavors. It’s worth noting that how well this keep warm method works will depend a bit on the rice cooker model used, as some do not keep warm at a high enough temperature to enable collagen breakdown (160 F or 71 C); for these lower temp rice cookers, the internal temperature of the meat may fall too much and result in less tenderness. For these shorter cooking times and smaller cuts of meat, though, it’s not likely to matter.

Can agree, but this is really cool for dorm students who are limited to only using a rice cooker(instead of a pan, you could brown the meat in the rice cooker), so i think this is targeted at those kinds of people Alternatively, not everyone's got a pressure cooker nor has the space for one, so being able to make do with what we have is also pretty cool

I can live without all the MSG and sodium from the curry brick
@sikero1Ай бұрын
MSG isn’t bad for you. It’s found naturally in a lot of food like beets, onions, potatoes, tomatoes, mushrooms and such. And the sodium level is diluted by all the water and stuff you’re adding, so unless you’re eating the entire batch of curry in one go, you should be just fine if you drink some water with your meal.
