Two things and maybe somebody’s already suggested this… The nutritional yeast’s flavour was probably enhanced by the amount of salt they used in the commercial product. And also I have found using roasted red pepper over just regular red pepper gives it more of a queso cheese flavour. Love your content!

Use sauerkraut or the juice from it to make things cheesier! The lactic acid is usually what vegan cheese sauce is missing! Also some sweetener, because dairy is slightly sweet from lactose. I also use doenjjang and umeboshi to layer different fermenty flavors.

Yes! Makes a huge difference! I can never keep them on hand so I usually just halve some red peppers from the garden, stick them skin side up under the broiler until the skin starts to blacken, then peel it when it cools, totally yummy! To add more cheesiness try adding a touch of dijon and some miso.

I just made this and it's surprisingly good. A couple things I did differently than you was I blended some chia seeds and almond slivers at the very start. I also added a spoonful of salsa. Then I added in everything else. I've never had this vegan queso before so I have no idea how close I got but it's good stuff! I didn't have any nachos so I just put it on some potatoes. lol

At lest here in Germany, the ingredients are ranked by weight. So even though nutritional yeast is low at the list, 3 or 4 tablespoons might be correct, because their density is super low. In order to make a difference in the total weight, there has to be quite a volume in there.

It will probably develope when stored, as most of the ingredients haven't had time to dissolve fully. They would have used industrial equipment and everything would have been almost powder by the time it went in, including yeast and cauliflower. Then it was maybe superheated prior to packaging which would cook ingredients together rather than blend. Who knows what goes on at production level.

And what is natural about forcefuly breading(raping), genetically manipulating, growing in confinement, injecting with antibiotics (and suplements and hormones), slaughtering in an industrial line of production, cutting into symmetrical cuts (so you know, it doesn't look like what it is, which is a corpse), cooling or even freezeing (so it doesn't petrify like it does in nature within 24 hours), packaged and transported to a grocery store, bought and then cooked and seasons so it loses its natural taste (which is basically nothing + iron) and approaches as much as possible plant based seasons (vegan seasons), then heat it up throughly so it becomes none-lethal to humans and years later have to take satins to deal with blocking arteries (best case cenário) or chemo for colon cancer.

Our Walmart regularly carries that exact brand, but only in the smaller container. It’s found in the produce vegan section near the kombucha. I put it on everything! Just made a version of this because I didn't have everything. I substituted roasted red pepper for the red pepper, left out the lemon juice, my onions were frozen, used garlic powder scant 1/2 teaspoon in place of fresh garlic, taco seasoning instead of chili spice, I added 2 Tablespoons of raw almonds that I soaked in water for about 15 min (this was in addition to the almond butter which I did use ) , and I used some frozen (previously cooked) cauliflower. We liked the final product. My husband is picky about the cheeze sauces but he liked this one. So if you don't have the ingredients, improvise! 😁 Thanks for the recipe!!

Quick tip for cutting the red pepper: Have you tried holding it with both hands and pushing the stem in with both thumbs? The stem and all the seeds attached to the white part fall in. I've found that apple cider vinegar tastes closer to the cheddar cheese sauces than lemon juice does. Maybe try that next time? And a tsp of white miso would rock it.

I took note of what others said in the comments and it turned out very good. I removed the lemon juice entirely, upped the ACV and almond butter to 1 tbsp each, used 3 tbsp nooch, and added 2 tbsp raw cashews to sub for the almonds used in the original recipe. It's creamy and delicious and came out a great consistency for dipping or nachos.

Oo I saw that queso dip at Costco too but thought it was too expensive and also way too much. Love that you've recreated this - I actually use a 5-minute Vitamix recipe from Jill McKeever and it's a serious mind blower. Base is oats! I have not felt the need to try any other queso recipe since discovering hers. I do love this product recreation idea though, hope to see more :)

The chilli + paprika will give you a close match to the cayenne pepper 😀

Ahhh thanks. Yes, it had cayenne in the ingredients but I didn't have any that I could find.... so I guess I made it instinctively. Haha.

Try using soaked cashews next time, I think that might make the difference n the cheesy factor.

The sauce was the bomb! I didn't have almond butter so I just blended TBSP of almonds with some hot water to make kind of an almond milk. I left out the water in the recipe to compensate and it turned out so creamy and delicious! Thank you!!! 🙌🙌🙌

The ingredients are listed in order by weight. Nooch is so so light that it makes sense that it's low down the list but volume is more than you'd expect🙂

@@straightedgeveganbel2453 i wondered that too? cos maybe the addition of the whole almonds is the mysterious thing he felt was missing from his? not that there was anything wrong with his....just that he was comparing his to the store bought..and said the store bought has an extra SOMETHING?? hes pretty logical tho, and if you are adding almond butter thats JUST 100% ALMONDS, he may have just doubled the almond butter amt & figured that covers the addition of whole almonds too?

I love this stuff. We just found it at our Sam's Club. Good on baked potatoes. I use it as a dipping sauce for air fry potatoes or anything.

@@Simnettnutrition there are a few different flavors of hummus now. Maybe you could trust a few of those. Black bean hummus, yam hummus, curry, etc. I saw a few in Walmart deli when I used to shop there.

I just made these and WOW tastes better than when we made nachos with cheese!!! So delicious this serious tastes like some restaurant style cheese!! Only difference I did Was roast the pepper, sautéed the onion and garlic (4 cloves) And I boiled the cauliflower in Tumeric to soften. I added way more nutritional yeast, added almond slivers, added hempseeds , used oat milk instead of water Eye balled the seasoning Added salsa And I did a huge batch of a whole cauliflower which was maybe 3-4 cups worth and a whole red pepper Olive oil and butter Delicious definitely would’ve fooled me thinking it was dairy ! THANKS SAVING THIS ONE 🧀 😊

“Keep in mind this is not one serving of dip”.... oh, yeah, for sure. I definitely wouldn’t eat most of that in one sitting. 😂 Honestly, though, when it comes to yummy dips like this, I do have to serve out a portion ahead of time, or I will eat way more than I should. I’ve got to make those nachos! That plate is making me drool!

" The whatever" from the califlower 😂 you use the same as the rest, chop and steam the same... , even the leaves from the califlower, use those on soups, broth... looks beautiful and yummy, Im making this today.... thank you! Great recepie!
