Just made this. Followed the recipe (with Butternut), but only half amount of everything. Used self made Thai chili jam instead of the red curry paste. The soup was amazing! The suggestion to eat it with Roti (or chapatti) is great. It is as if those two dishes are made for each other. A keeper. My wife asked me to make it again. Tomorrow... Thanks for sharing!

I made this soup today and it was absolutely delicious. I followed the recipe faithfully. I did add 1 lump of cane sugar to make it a touch sweeter but it really isn’t necessary. This recipe is keeper and I will make again. Thanks for sharing.

Made this! Added thin sliced beef and some pan-fried bok choi Make sure not to cook the curry paste to long, just long enough for it to soften up. Turns bitter real quick, learned the hard way.

I garnished it with fresh tomatoes and parsley. I used canned pumpkin as a shortcut and garlic powder. I used fresh New Mexico hatch green peppers and conventional jarred tomato salsa instead of chili paste. The hatch peppers look like green bell peppers, but they are very spicy!

Umm there’s a whole section of the butternut pumpkin being broken down. Perhaps the butternut pumpkin is called squash in your country. It often causes confusion.

@@jungleperry as I say, some countries have different names. Cucurbit can be called squash or pumpkin. In Australasian cultures it is referred to as butternut pumpkin. In the US, squash.
