The story you share about doing meatless Mondays and then realizing meat was taking up a big portion of your food budget is very real and relatable. When I was in college I learned very quickly just how expensive meat was, especially compared to high protein plants like chickpeas and black beans which frequently went on sale and were easy to stock up on in bulk. I'm mostly vegan at this point but so many of the techniques I learned and upon which I built my confidence came from meatless cooking and that's just what I feel most comfortable with. Really appreciate you sharing these stories and helping to bust a lot of these myths of vegan cooking being high maintenance and expensive

I really enjoy you and your wife’s “Keep it Dairy Free” channel. I’ve gotten so many helpful tips. & now this additional channel is helping my son. My son Julian lives in Osaka, Japan with his dad & stepmom who are both vegans & at age 29 Julian was diagnosed on 4/6/2022, with Leukemia. Changing his diet has been at the forefront of his recovery. I wanted to introduce him to a person that’s relatable. Your channel does just that 👏🏾seeing how to cook healthy vegan meals is such a helpful reference point for Julian. Now I just finished making the Mexican sweet potato hash and loved that too! Your meals make it so easy to not even want to have the processed vegan meat. Vegan is surely the way to go. I have had both shoulder surgeries in the past 5 years. First one, I was a vegetarian (been for 30 years) and for the second surgery, I had been vegan for a year. Wow, the recovery rate difference was staggering! I was 'months ahead of time' said the physical therapist and when I told her about my new eating habits she agreed that it made all the difference in the world.

I just found out I have high cholesterol, so I’m going to need to eat healthier, and I’ve decided to incorporate more vegetarian/vegan meals, because salads can get boring. I’ll definitely be making the pancake and the sweet potato dish. That’ll be cheaper for me and easier to cook than ordering something. And they’ll keep well. I can save the meat for dinner.

Don't do it for environmental reasons, its actually worse for the environment. Do it for the animals though. And if you want to really help your body while on a vegan diet, use grass fed pasture raised organic butter when you cook. Animal fats are better for you in every way, and these types of farms normally provide very good lives for the animals. The reason for the butter is you pick up some missing nutrients that a vegan diet normally lacks, and seed oils and olive oil will fully oxidize when exposed to high heat and is horrible for you.

hey, maybe you won't see this anymore but what i love to do when im cooking with sweet potatoes is using the peels as a little snack. you can put a little oil and species on it and pop it into a oven or airfryer. the longer you have it in there the more crunchy it will be come. this way there is also less waste. win-win

I am definitely trying the breakfast baked oatmeal. I found the video you did of Walnut Meat and it was absolutely delicious. With regards to saving time - I totally get it, I hate making pancakes too. But I also save some by not peeling my potatoes or sweet potatoes which you did for the second recipe. But I know for some people the texture is just not acceptable so I guess it's always time vs preference :D

I just feel like I cant get some of them clean enough and end up peeling those :/ Other than that when they're roasted in the oven especially I love the texture differences

Eating vegan is so easy, all you need is a couple ingredients and a little time to measure and cook them. This way of eating is evidently how nature intended human nutrition to be: imagine how easy it would have been for our ancestors to gather all this stuff in the wild and prepare these simple meals. ❤️

YESSSSS! I was looking to see what I did to ur video. Your stuff is great. On point for how I cook. Avocados went sky high here on East Coast of Canada....sad to walk past but paving that price to not know if they would ever ripen or were bad in the center was just too rich a lottery for my entertainment budget.
