1 lb of cleaned Tamarind
1 tbsp finely minced garlic
1 tbsp. minced pepper
1/2 tsp. salt or to taste
3 tbsp. brown sugar
1 tsp geera powder
2 tbsp amchar massala powder
1/4 cup mustard oil or less depending on how much you want.

Thanks for this recipe. I am so glad to have found it. I never heard of tamarind amchar only mango. I definitely will be making some.

so simple and tasty could you advise me if using baking soda is used in tamarind products for its tart and acidic property

well I can say its not used in this recipe I don't know if its used in other preparations. But I wouldn't.

You can but it wont last as long and the taste may differ slightly.

Growing up watching my grandma making amchar she always hot the oil first before adding it to the amchar

I always fry the minced pepper in oil, everyone has their own method looks really good and tasty (I put the minced pepper in the oil when it's cold n let it fry as the oil gets hot, please don't put the pepper when the oil is hot.)

i thought the spices were slow cooked to infuse the mustard oil then the hot oil is slowly added to the tamarind. This is way easier.

+Deborah Lopez a few days but it's optional you don't have to. Sometimes I don't and it tastes just as good.

i looked at several mustard oils but didn't buy them because it said "for external use only" where can i get the edible one or is there a substitute???

you can try heating up the vegies oil but the taste won't be the same. or you can omit the oil.
