The Yuba, looks exactly like egg. That is such a good alternative.

Yeah, the black salt and tumeric is well known among vegans, but it's the first i've seen/heard of using yuba for egg-like texture (my only prior experience with yuba was some yuba based noodles).

Thank you! I grew up eating yuba so I knew the texture was very very similar to that of cooked eggs but marrying it with black salt and turmeric, I finally got the recipe I was wanting to create😊
Black salt is very strong. Just a few pinches are all you need. If you make an "egg salad" sandwich with garbonzo beans instead of tofu, the black salt is a good addition.

Great recipes using yuba! Did you make the yuba from "fresh" soy milk? In non-Asian countries, we can only get tetrapack "longlife" soy milk (i.e. either non-refrigerated or, even if refrigerated, are not "fresh" as in Japan). Do you think we can use long life soy milk to make yuba too?

Hi there! Thank you for your question! I used fresh soy milk to make yuba (since that’s actually the only kind available here in Japan haha) but with the long life kind, I don’t see why not as long as it’s plain without any added sugar or flavor and pretty thick (not like easy-to-drink watery kind). Please do let me know if you try it!😊
Have you tried to make mayo from aquafaba? I am not a tofu lover, so it is a nice alternative for me.

I kind of have reservations about aquafaba... I guess I’m not 100% convinced that it’s good for the body😅 This mayo is made of tofu but doesn’t have the “tofu” flavor😊

@@TOKYOVEGLIFE I guess I can understand it if you use the one from cans. But you may just soak beans in water, then no preservatives, sodium etc.
